The Super Bowl was almost a week ago now, but I’m still craving snacks. Savory snacks with a dipping sauce. These Asian Chicken Meatballs with Peanut Dipping Sauce, to be exact. I made these for the Super Bowl, we devoured them and now we need more! Seriously, these Chicken Meatballs and peanut dipping sauce are good enough that my husband, my picky two year old and myself leveled this dish before halftime.
I always watch how people eat their food, it’s weird, but I’m curious. Do you eat the best part of your plate first or last? I tend to save the good stuff ’til the end. I guess I think of it as a treat for eating my vegetables. I’m learning to rethink this, as I no longer want to be a part of the clean plate club, it’s doing nothing for my waistline, amirite? Anyways, I watched both my husband and two year old destroy these meatballs, first before any other option. My husband didn’t even put anything else on his plate the first two go arounds but these meatballs and dipping sauce. Obviously they’re a hit in our household. All the other appetizers were delicious too, but these Asian Chicken Meatballs with Curry Peanut Dipping Sauce took the cake.
When I first laid eyes on this Coconut Curry Chicken Meatball recipe, on Bewitchin’ Kitchen, I just knew it was going to be a hit. They say we eat with our eyes first and her photos are drool-worthy. I ditched the sauce for this appetizer version. If you want an unbelievably delicious dish for dinner try the full recipe over cauliflower rice. Like I said, I replaced the sauce with a Peanut Dipping Sauce. It just made more sense for an appetizer version.
The meatballs are easy, beyond easy! Throw all the ingredients except the chicken into a high powered blender or food processor and pulse until well chopped. Or if you don’t have either of those kitchen tools, you can do this by hand, it’ll be worth it, I promise. Once everything is chopped mix with the chicken, until it’s well combined. Roll the meatballs into bite-size balls and place on a pan. I use stoneware for these, but on a regular pan, just line or grease it first. Then bake for 18 minutes and then flip and bake for an additional 13 minutes or until cooked.
While the meatballs are baking, make the dipping sauce. I used this recipe, from Cookie and Kate, as a starting point and then tweaked it to my tastes. The Peanut Dipping Sauce simply needs to be whisk together and it’s ready. The sauce has a great flavour and combined with the meatballs it’s perfect, heavenly in fact!
This recipe is easy and it tastes like you’ve worked all day, which is totally my kind of recipe. Really, who doesn’t love that kind of recipe. Asian Chicken Meatballs with Peanut Dipping Sauce
Perfect chicken meatball appetizers with a delicious curry peanut dipping sauce. The best bite-szie morsel at your next party guaranteed!
INGREDIENTS
Meatballs
- 1/2 cup carrots roughly chopped
- 1/4 red onion chopped
- 2 tbsps freeze dried cilantro
- 2 tbsps freeze dried basil
- 1 clove garlic
- 1 lime juiced
- 1 tbsp soy sauce
- 1 tsp ginger ground
- 1/2 tsp ground cumin
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1 lb ground chicken
Peanut Dipping Sauce
- 1/2 cup natural peanut butter creamy
- 6 tbsp or more coconut milk full fat
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp honey
- 1/2 tsp red curry paste
- 1/4 tsp ginger ground
- 1/2 lime juiced
- 1 clove garlic
INSTRUCTIONS

Preheat oven to 400 degrees F.

In a high powered blender, pulse all the meatball ingredients except for the chicken until everything is chopped fine or you can hand cut everything fine. Add chicken and mix well.

Shape into bite size meatballs and place on a cookie sheet. Bake for 18-20 minutes and then flip and bake for an additional 13-15 minutes.

While the meatballs are cooking, whisk together the ingredients for the peanut dipping sauce.

Serve alongside warm meatballs.
