Who else loves a simple three-ingredient summer recipe? I’m all for easy especially in the heat of the season. The temperatures are soaring here and I can’t be bothered to make anything elaborate, that’s why these Cherry Coke Float Popsicles are gems. They’re beyond easy, kid-friendly and pretty darn tasty!

Let’s be honest, if you’re like me, a pop float is probably not your immediate thought when you think dessert, however, just like me, you would never pass one down. It’s not necessarily my go-to treat, I think of it more of an afternoon snack than a dessert, but seriously they really are delicious. Let’s not stop there, though, let’s turn it into every kids favourite handheld summer treat, a popsicle!

How to make a Cherry Coke Float Popsicles

These are so easy. I don’t think they took me more than 5 minutes to put together. That’s my kinda summer dessert. To start let your ice cream soften a little bit. Spoon a couple tablespoons of ice cream into each popsicle mold. Stuff a halved cherry into each mold and slowly top with cherry coke.

That’s it! put the cover on the popsicle mold, this one here (aff. link) is my favourite. Let it freeze for an hour and then pop a stick in each mold. Leave these to freeze overnight. To remove from the mold, just rinse under cold water for a few minutes and gently pull the popsicles out. Store in an airtight container or ziptop bag.

Cherry Coke Float Popsicles

Take a "pop"-sicle one step further and add ice cream! Cherry Coke Float Popsicles will have your whole family asking for dessert first!

Prep Time 5 minutes
freeze 8 hours
Servings 10 popsicles

INGREDIENTS

  • 1 1/4 cup ice cream
  • 2-3 cups cherry coke
  • 10 maraschino cherry, cut in half

INSTRUCTIONS

  1. Spoon two tablespoons of ice cream into each popsicle mold along with two cherry halves.

  2. Slowly pour cherry coke into each mold, leaving about half an inch from the top of the mold for the popsicles to expand.

  3. Freeze for at least eight hours.

  4. To remove from the popsicle mold, run then end of the mold underwater for a minute or two and then gently pull each popsicle out of the mold. Store in a freezer bag or airtight container.
