The first time I stayed at my husband’s apartment I reorganized all of his cupboards, no lie. I’m a little embarrassed to tell you this. Who does that? In my defence, nothing had a home. I don’t know how anyone lives in that kind of chaos. Now, I don’t mean a couple of things were out of place. I’m talking four plates in one cupboard, while two were in another. Five glasses next to the cereal, while the bowls were down with the pots. Needless to say, I reorganized EVERYTHING! As silly as it sounds there was one storage container that found its way right into my heart. And I still use it for these Rice Krispie Cheddar Crackers.

I know, I know, how ridiculous! It’s Tupperware, BUT it’s the perfect size for these crackers, and I love it. It’s my go-to for these crackers and our favourite Rosemary Butter Cookies. Ok, I know you’re rolling your eyes, but hear me out, this clear plastic container with the green lid has powers. Whatever I put in it, is so good, it always disappears in no time flat.

The first time I made these crackers, they vanished. I had filled the container and left the last batch out to cool while I ran to the store. I got back and my husband met me at the door with a big grin on his face. He wanted to let me know how much he enjoyed ALL the crackers. Seriously! This makes a decent batch of crackers and he ate all but a few. They are that good and so very very addictive.

Ok, let’s talk about these crackers for a minute. These little bites are ridiculous! Just a few ingredients and some spices and you’ve got an insane snack. They’re crunchy yet buttery, loaded with tasty cheddar and just a hint of heat from the cayenne. They’re unreal, truly one of our favourites and I’m positive you’ll love them too!

How to make Rice Crispy Crackers

So, you may have already stumbled across these. My grandma calls them cocktail crisps, I’ve also seen them called firecrackers. Ringing any bells for you? Well, if you have had the chance, I’m sure you’ll agree and can back me up that these are SO good. If you haven’t you are in for a treat! Ok, let’s talk about how you can make them at home.

Start by creaming together the butter and cheddar. I just use a wooden spoon, but you could use a hand mixer or a stand mixer if you prefer. After the butter and cheddar is all mixed together. I add in the flour and spices and mix gently at first. It takes a bit to mix the two together so don’t go crazy, or you’ll end up with a pile of flour all over you and the floor. #ithappens

Once that’s incorporated just stir in the Rice Krispies and mix until it all comes together. Pinch off a small piece of dough, about the size of a heaping teaspoon and roll it into a ball. Space these out on a cookie sheet and then press them down with a fork. I find it easiest to use my opposite hand to gently hold the cracker in place while I slide the fork off, sprinkle them with a bit more cayenne and then bake until crispy and golden. Let them cool on a wire rack and then obviously store them in a square container with a green lid! Haha.

I know they’ve been around for decades, but I think a classic is always welcome! Don’t you? I’m pretty sure my husband has and always will make these into a full meal. They have a nice heat that comes on the back of the crispy bite and makes them truly addictive. That’s probably why they never last long. Rice Krispie Cheddar Cracker

Rice Krispie Cheddar Crackers are an irresistible snack. A buttery crisp that ends with just a hint of heat. So good, my husband has made these into a full meal.

INGREDIENTS

  • 2 cups sharp cheddar cheese, shredded
  • 2 cups flour
  • 2 cups Rice Krispie cereal
  • 1 cup butter
  • 2 tsp Worcestershire sauce
  • 1 tsp cayenne pepper, plus more to sprinkle
  • 1 tsp salt
  • 1/4 tsp garlic powder

INSTRUCTIONS

  1. Preheat the oven to 375 degrees F.

  2. Cream together the butter and cheddar cheese.

  3. Gently stir in the flour, Worcestershire sauce, cayenne, salt and garlic powder. Mix this slowly until incorporated and then continue stirring until the dough starts to come together. I recommend using your hands.

  4. Mix in the cereal and stir to combine everything.

  5. Finally, pinch off large teaspoon-sized pieces of dough and roll them into balls. Place them on a parchment-lined baking pan and flatten the crackers with a fork. You will need to gently hold the cracker down to remove the fork. Sprinkle with a bit more cayenne pepper before baking.

  6. Bake for 13-15 minutes or until golden and crispy. Store in an airtight container.
