Mini Peanut Butter Cup Cookies

The classic combination of peanut butter and chocolate. Peanut butter cookie cups stuffed with a mini peanut butter cup are a favourite at Christmas time but truly good all year round!

INGREDIENTS

  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cups flour
  • 3/4 tsp baking soda
  • 1 tsp salt
  • 40 mini peanut butter cups (like Reese's)

INSTRUCTIONS

  1. Preheat oven to 350 F.

  2. Cream together the butter, peanut butter and sugars in a large bowl. Mix in the egg and vanilla. Stir in flour, baking soda and salt until well combined. 

  3. Roll into 40 balls and place each in a greased mini muffin tin. It's easiest to divide the cookie dough into quarters and then roll 10 balls from each.

  4. Bake for 9 minutes or until golden brown.

  5. Remove muffin tin from the oven and immediately press peanut butter cups into each cookie.

  6. Let cool completely before removing from pan.
