Preheat the over to 400 degrees F.
Heat the sesame oil in a large pan over medium high heat. Once the oil is hot, stir in the coleslaw and onion and fry about 6-8 minutes or until soft. Stir frequently to keep the coleslaw from burning.
While the coleslaw is cooking, make the wonton chips. Spray a baking sheet with cooking oil. Cut the wonton squares into three equal strips. Lay in a single layer and spray again with cooking oil. Add a sprinkle of salt, if desired. Bake for 7-9 minutes until golden brown.
Turn the heat down to medium and add in the chicken, ginger, green onions, soy sauce, salt and pepper. Stir until heated through.
Serve hot with a side of baked wonton chips.
