Spinach and Feta Scrambled Eggs with Tomatoes

This is always my go-to recipe when I decide to get healthy. ALWAYS. It's filling, tasty and super easy! Scrambled eggs with sauteed spinach and salty feta with bright fresh tomatoes to balance every single bite.

INGREDIENTS

  • 1 cup fresh spinach, roughly chopped
  • 2 eggs
  • 2 tbsp onions, minced
  • 1 tbsp butter, divided
  • 1/2 tomato, sliced thin
  • 1 tbsp feta cheese, crumbled
  • salt and pepper, as desired

INSTRUCTIONS

  1. In a medium frying pan, melt half a tablespoon of butter over medium heat and saute the onions for about five minutes, add in the spinach and saute that until wilted another three minutes. Spoon that onto your serving plate.

  2. Add the remaining butter to the frying pan and scramble the eggs to your liking. Top the spinach with the eggs and then sprinkle on the feta cheese and finish with fresh sliced tomatoes.

  3. Serve immediately.
