Classic Hamburger Vegetable Soup

This recipe comes from my grandma's best friend. It's a classic and tastes like home. This soup has delicious flavours and is loaded with perfectly cooked veggies. A welcomed dish any time of year, but a must on those chilly winter nights!

INGREDIENTS

  • 1 lb hamburger
  • 2 - 1 lb cans diced tomatoes (do NOT drain)
  • 2 cups potato, diced (I use Russet)
  • 1 cup cabbage, shredded
  • 1 cup onions, diced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 3 cups water
  • 1 tsp beef bouillon (I use Better than Bouillon)
  • 1 tsp Worcestershire sauce
  • 1 tbsp salt
  • 1/2 tsp basil
  • 1/2 tsp thyme leaves
  • 1 bay leaf

INSTRUCTIONS

  1. Fry the hamburger and onions in a large pot. Cook until the hamburger is cooked through.

  2. While the hamburger and onions are frying. Dice the potatoes, slice the carrots and celery and shred the cabbage. Once the burger is cooked, add the rest of the vegetables to the pot.

  3. Add in the cans of tomatoes, water, beef bouillon, Worcestershire and spices. Stir to combine. Bring everything to a boil. Cover and let simmer on low for an hour.
