Chocolate Chip and Toffee Banana Muffins

Chocolate Chip and Toffee Banana Muffins are the perfect way to use up those ugly bananas. They turn out so moist and delicious!

INGREDIENTS

  • 1 cup mashed bananas (I used four very ripe bananas)
  • 1/3 cup oil
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/4 cup Toffee Bits (I used Heath's Bits o' Brickle)
  • 1/2 cup chocolate chips, semi-sweet

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.

  2. Beat together oil, egg, sugar and bananas. Stir in vanilla.

  3. Sift together the flour, baking powder and baking soda and salt. Add this to the banana mixture and mix until just combined.

  4. Fill greased muffin tins about 3/4 of the way full or line with cupcake liners.

  5. Bake for 23-25 minutes or until the tops bounce back when touched.
