A delicious and quick recipe for Blueberry Buttermilk Pancakes. No extra equipment and these pancakes fluff up like a dream. Filled with blueberries, these make weekend mornings that much sweeter!
Sift flour into a large bowl and whisk in sugar, baking soda and salt.
In a separate bowl, lightly beat the eggs and mix with the buttermilk and vanilla. Pour into the dry ingredients and mix until combined. Stir in the blueberries
Heat a non-stick griddle pan or frying pan over medium heat.
Pour 1/4 cup of batter on frying pan and let cook for about 2 minutes until the edges look dry and bubbles appear on the top. Flip pancake over and cook for an additional minute.
Adjust heat as you go, so the pancakes don't burn.
