Tater Tot and Bacon Breakfast Quesadillas

Tater Tot and Bacon Breakfast Quesadillas are the epitome of breakfast love. Loaded with bacon, tater tots and lots of cheese. A must-make!

INGREDIENTS

  • 2 9-10" flour tortillas
  • 4 eggs, large
  • 1 1/2 cups Colby jack cheese, shredded
  • 1 cup tater tots
  • 4 slices bacon
  • 2 stalks green onions, sliced
  • 2 tbsp reserved bacon grease, divided
  • salt & pepper to taste

INSTRUCTIONS

  1. Bake tater tots according to package directions, when finished cooking, press each tot flat with the back of a fork, set aside.

  2. While the tater tots are baking, fry bacon until crispy, drain and reserve grease.

  3. Beat two eggs in a small bowl, set aside.

  4. In a 9 or 10" skillet or similar, heat one tablespoon of the reserved bacon grease over medium heat. Gently pour in the beaten eggs and season with salt and pepper. Sprinkle a 1/4 of the green onions over the eggs and let cook until set.

  5. Sprinkle 1/4 cup of the cheese over the set eggs and cover with a tortilla. Carefully flip everything over so that the tortilla is now on the bottom. On one side of the quesadilla add another 1/4 cup of cheese, then spread on a tablespoon of the green onions, two pieces of bacon, a layer of tater tots and finish with another 1/4 cup of cheese. Fold the empty half of the tortilla over the layered side and cook on both sides for a few minutes until the cheese is melted through.

  6. Repeat with second tortilla and serve with sour cream.
