I adore a good breakfast dish. Especially one that I can make the night before. One of my favourites is my cousin Chandra’s Land of Nod Cinnamon Buns. If you haven’t tried that one, add it to your must-try list, but right above that, pencil in this Apple, Ham and Cheese Breakfast Casserole. It’s just as good and the total package. This one will fill you up until lunch. It’s savoury with just a hint of sweetness from the apples.
The original recipe doesn’t call for apples or even the onions or a lot of the other ingredients, but it did suggest serving it with hot apple pie filling on the side. Instead, I just added some grated apples right into the mix and it’s a natural combo. It adds just the right amount sweet.
My cousin made a version of this for my aunt’s birthday party last May and I realized how versatile this dish really is. In her dish, she topped it with Rice Krispie cereal, whereas I use cornflake crumbs. Not a ham fan? You could substitute cooked bacon or cooked sausage. Add any vegetables you like, peppers, spinach, mushrooms and even swap out different cheeses. It’s totally customizable, which makes this the perfect breakfast!
How to make Apple, Ham and Cheese Breakfast Casserole
To start, grease a casserole dish with butter and lay six slices of bread in the bottom. Then, top that with ham, apples and diced onions, sprinkle on the grated cheese and cover with the remaining six slices of bread.
Next, in a medium bowl, whisk together the eggs and milk along with the spices and green onions. Gently pour that mixture over the casserole, cover with foil and let that marry overnight. In the morning, sprinkle on the cornflake crumbs and drizzle with melted butter. Pop this dish into the oven and bake until it’s all set. Serve this with maple syrup or apple pie filling and a fruit salad.
I can’t wait for you to try this. More than that, I can’t wait for you to wake up and breakfast to be ready to bake. It makes for a perfect morning. The best way to start off a weekend or a holiday. No-fuss breakfasts are a must! Prep this one tonight for a breezy tomorrow!

Apple Ham and Cheese Breakfast Casserole
A delicious wife-saving breakfast casserole. Make it the night before and save all that prep. Relax and enjoy an easy morning. Great for holidays and brunches.
INGREDIENTS
- 12 slices white bread, or enough to cover the top and bottom of a pan.
- 8 slices ham, or enough to cover the bread
- 1/2 cup diced onions
- 1 apple, shredded
- 8 oz. Colby jack cheese, shredded
- 6 eggs
- 2 cups milk
- 1/2 tsp dry mustard
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tsp Worchestershire sauce
- 1/4 cup green onions, sliced fine
- 1/2 cup butter
- 1 cup cornflakes, crushed
INSTRUCTIONS

Prepare a 9"x13" casserole dish by buttering the sides and bottom. Lay six slices (or enough to cover the bottom of the dish. Layer with ham, onions, grated apple and cheese. Cover with remaining sliced bread.

Mix together eggs, milk and spices. Stir in green onions and pour over casserole. Cover and refrigerate overnight.

In the morning, preheat the oven to 350 degree F. Crush the cornflakes and spread over the top of the casserole. Melt the butter and pour over the crushed cornflakes.

Bake until set and golden brown, about an hour. Remove and let sit for about 5-10 minutes.
