Apple Ham and Cheese Breakfast Casserole

A delicious wife-saving breakfast casserole. Make it the night before and save all that prep. Relax and enjoy an easy morning. Great for holidays and brunches.

INGREDIENTS

  • 12 slices white bread, or enough to cover the top and bottom of a pan.
  • 8 slices ham, or enough to cover the bread
  • 1/2 cup diced onions
  • 1 apple, shredded
  • 8 oz. Colby jack cheese, shredded
  • 6 eggs
  • 2 cups milk
  • 1/2 tsp dry mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp Worchestershire sauce
  • 1/4 cup green onions, sliced fine
  • 1/2 cup butter
  • 1 cup cornflakes, crushed

INSTRUCTIONS

  1. Prepare a 9"x13" casserole dish by buttering the sides and bottom. Lay six slices (or enough to cover the bottom of the dish. Layer with ham, onions, grated apple and cheese. Cover with remaining sliced bread.

  2. Mix together eggs, milk and spices. Stir in green onions and pour over casserole. Cover and refrigerate overnight.

  3. In the morning, preheat the oven to 350 degree F. Crush the cornflakes and spread over the top of the casserole. Melt the butter and pour over the crushed cornflakes.

  4. Bake until set and golden brown, about an hour. Remove and let sit for about 5-10 minutes.
