These Bacon Wrapped Stuffed Olives were my backup plan. I was sure the original recipe I had in my mind for today’s post was going to be good, so I didn’t bother really planning ahead. I was so sure in fact, that I created said recipe yesterday and then panicked when it didn’t turn out the way I expected. It was good, but when I popped one of these olives into my mouth, I knew this one was the winner.

I happened to find feta stuffed olives while shopping for stocking stuffers and I knew I’d be able to use them in something. To be completely honest, I’m not sure I even taste the feta, so if you can’t find feta stuffed olives in your grocery store. I’d suggest a garlic clove stuffed olive or just go plain old regular olives. The combination is so tasty.

HOW TO MAKE Bacon Wrapped Stuffed Olives

INGREDIENTS

INSTRUCTIONS

  1. Preheat oven to 400 degrees F.
  2. Wrap the cut bacon around the olive. If your olives are stuffed with cheese, my suggestion is to turn the olive and wrap the opposite way with a second piece of bacon to keep the cheese from oozing out. Secure with a toothpick. If you are using garlic clove stuffed olives, you’ll likely only need 4 slices of bacon, but you may need to reduce the cooking time slightly.
  3. Bake for 35 minutes or until cooked to your desired doneness.
  4. Serve immediately. They’re best hot.

In full disclosure, I’m not the biggest fan of olives, I rarely eat them, maybe in a taco salad or something similar but I’m not the gal that will eat them from the jar, I’d take pickles over olives any day, but today, give me ALL the Bacon Wrapped Stuffed Olives. Guys, these are so good and so easy. A two-ingredient appetizer that’s perfect for those times when you’re in a rush and need an easy recipe that tastes great. Save this one when you need a quick fix in the future.
