I’m about to gush a little, this Hot Cheesy Spinach Dip is that good, it’s legendary! It’s the dip, I’m known for in my circle of friends, not that I can take credit for it. But I might win the award for the most times it’s been made. This spinach dip is creamy and cheesy with just the perfect amount of spice. It’s hands down my favorite dip and I’m about to share it with you.

I make this dip for everything. A movie night by myself, gatherings with friends, any potluck, I’ve even taken it to work as a birthday treat. Don’t expect any leftovers, it never happens, I probably should call it never-any-leftovers spinach dip. My remedy to this, make an extra batch so you can snack when you get home, you’ll be glad you did!

This spinach dip is incredibly indulgent; however, anytime I add a green vegetable to something I figure I get at least three guilt-free extra mouthfuls and with this dip, you’ll want it, trust me!

I can’t take credit for this dip though, my cousin Jenn actually turned me onto it. I was living in Calgary at the time and she stopped by one night and whipped this up. She added random spices that lived in my cupboards, a combination I probably wouldn’t have thought of. The next day, I ran to the corner store and bought every single ingredient so I could make it all over again, no lie!  I’ve always been in awe of those people that can take simple ingredients and create something so luscious in a matter of minutes. This dip is a prime example.

I’ve played many times with the spices, adding extra, subtracting others, but this version is my favourite. My cousin has also suggested adding bacon. I love the original and have honestly never veered from it. One of these days though, I’ll add bacon, and with that said, I’m already craving the next batch.

How to make Hot Cheesy Spinach Dip

I try to plan ahead when I make Hot Cheesy Spinach Dip so I can pull the cream cheese out to let it soften a bit, but sometimes, I’m just not that organized. I have found the soaking the cold bricks in hot water while you grate the cheese, chop the spinach and green onions, seems to buy me enough time to soften it enough that I can get on with the show. I’m impatient and extra impatient when I’m making this dip.

So, once your cream cheese is soft enough to mix it easily, add in the Miracle Whip, sour cream, and spices. I usually taste as I go, for um, seasoning reasons, yea, let’s go with that {winks}. Once the flavouring is to your liking, add in the spinach, cheddar and green onions. Scoop it all into an oven proof dish and bake. Serve this with sour dough bread or pita chips.

So, now I pass the spinach dip baton on to you. Try this dip and you too, will be a legend in the appetizer world. Ok, I know that sounds so over the top, but seriously, one bite is all it will take and you’ll be completely sold!

Hot Cheesy Spinach Dip

This dip is addictive! It’s so good. It’s rich and cheesy–the perfect appetizer or late night snack. I’ve been known to make it a full meal, it’s that good! This dip is my go-to for any potluck.

INGREDIENTS

  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1 tbsp miracle whip must be miracle whip
  • 1 tsp Mrs. Dash original
  • 1/4 tsp garlic powder
  • 1/4 tsp onoin powder
  • seasoning salt to taste
  • 4 green onion tops chopped
  • 1 cup sharp cheddar cheese shredded
  • 1 cup fresh spinach chopped

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.

  2. Mix the cream cheese, sour cream and miracle whip until smooth. Add in the spices and mix well. Add spinach, green onions and cheese until well combined.

  3. Spoon dip into an oven-safe dish, cover with foil and bake for 20 minutes or until dip is warm and the cheese is melted. Serve with your favorite bread or pita chips.

RECIPE NOTES

You could hollow out a sourdough round or crusty bread loaf and cook it in that, but you’ll need to increase the cooking time.
