This recipe is my grandma’s best friend Evie’s Classic Hamburger Vegetable Soup and it’s everything you think of when you think of Grandma’s cooking. It’s so comforting and feels like you’ve just walked through her front door. Just like Grandma made it, this soup is loaded with veggies and full of flavour and will have you coming back for seconds, trust me.

I’ve always been a huge fan of hamburger soups and this recipe means so much to me. You see Evie and my grandma have been the best of friends for as long as I can remember. They were always together. On Thursdays, Evie, my grandma and two other friends had standing lunch plans that would stretch into the afternoon and sometimes into dinner.

They were inseparable. My grandma lost most of her eyesight a few years ago, but she can hear. Evie was the opposite, she can see but her hearing is going. Together they were unstoppable! So, if I can’t find a recipe that belongs to my own grandma having Evie’s recipe is the next best thing.

Their friendship is one that I’ve always wanted to have with my own friends. There was even a little plaque that hung in their favourite restaurant referring to them as the golden girls. I’m not sure which lady was which character, but I love that they have had a friendship that has lasted the test of time. I asked my grandma for her best life advice right before my husband and I got married and her answer was to always surround yourself with good friends. That those friendships were invaluable and to truly cherish them.

So, let’s talk about this soup for a minute. It’s an incredibly comforting bowl of soup. The kind that will have your stomach growling upon entering the kitchen. It’s loaded with tasty veggies and just the right about of seasoning. We’ve had it three times this week, but it is soup and I sort of feel like that’s normal, but for me, who’s not a big soup fan, it’s a big deal! I’m positive this soup will remind you of grandma’s and have you feeling all nostalgic. Here’s how you can make it too!

How to make Classic Hamburger Vegetable Soup

In a large pot, fry the hamburger and onions until the hamburger is cooked through and the onions are translucent. While that’s cooking, chop, dice and slice the vegetables. When the hamburger and onions are ready, toss in all the veggies along with the rest of the ingredients and give it a good stir. Bring it to a boil and then turn the burner down and let it simmer for an hour.

That’s it, it’s a pretty easy soup to throw together, a bit of effort with all the chopping but it’s definitely worth it. Give this soup a try, your house will smell so good and your tastebuds will thank you!

Classic Hamburger Vegetable Soup

This recipe comes from my grandma's best friend. It's a classic and tastes like home. This soup has delicious flavours and is loaded with perfectly cooked veggies. A welcomed dish any time of year, but a must on those chilly winter nights!

INGREDIENTS

  • 1 lb hamburger
  • 2 – 1 lb cans diced tomatoes (do NOT drain)
  • 2 cups potato, diced (I use Russet)
  • 1 cup cabbage, shredded
  • 1 cup onions, diced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 3 cups water
  • 1 tsp beef bouillon (I use Better than Bouillon)
  • 1 tsp Worcestershire sauce
  • 1 tbsp salt
  • 1/2 tsp basil
  • 1/2 tsp thyme leaves
  • 1 bay leaf

INSTRUCTIONS

  1. Fry the hamburger and onions in a large pot. Cook until the hamburger is cooked through.

  2. While the hamburger and onions are frying. Dice the potatoes, slice the carrots and celery and shred the cabbage. Once the burger is cooked, add the rest of the vegetables to the pot.

  3. Add in the cans of tomatoes, water, beef bouillon, Worcestershire and spices. Stir to combine. Bring everything to a boil. Cover and let simmer on low for an hour.
