Funny story, you know how you’ll see a recipe pop up and then all of a sudden every single person you know is making it. Your best friend is making it and your mom’s tried it. Your aunt has made it and then three co-workers are talking about it and it’s travelled through your circle. That’s what happened with Everybody’s Favourite Chicago Dip. You see it all started with Cheryl, my coworker. I don’t know when she brought it, where she brought it to, or any of the actual first introductions to this dip, but it travelled through our work circle and branched out from there.

Like everyone else at the time, I joined the scrapbooking bandwagon. There was a small group of us from work that would get together from time to time to spend an afternoon sharing tools, ideas and pasting photos and embellishments into fun designs. And, of course, there was food. What gathering of women doesn’t include food? Lynel (one of my scrapbooking coworkers) made Cheryl’s dip. After one bite, I immediately stamped a recipe card outline onto cardstock (how convenient was that) and handed it over to her for the written instructions.

I polished off the rest of the dip, that day and then made it the following weekend and then again for my best friend’s bridal shower. Where her mom requested the recipe and now makes it regularly. It’s such a good recipe, it’s cheesy and gooey and a little on the thicker side, so you’ll want to serve it with crackers or sturdy taco chips. Think more of a scoop then dip. And with a tiny bit of heat, this dip is insanely delicious and won’t last long.

How to make Everybody’s Favourite Chicago Dip

I love dips, there’s something so easy about them, and they generally always taste like a million bucks. When is the last time you went to a party that didn’t serve a dip of some sort? If you can name one, you might need a new group of friends. Or maybe you need to introduce them to this Hot Cheesy Spinach Dip, (one of my most requested recipes) or The Best Chunky Guacamole and of course Everybody’s Favourite Chicago Dip will be a total hit. Here’s how you can make it for your next party!

Mix together the cream cheese, mayonnaise, and sour cream. Stir in the spinach. I like to use fresh spinach, but frozen works as well, just drain it completely. Next, you’ll add in the spices. Chicago Dip does have a bit of a kick to it, from the red pepper flakes. You can always omit them or reduce the amount if you’re not a fan of spice. It’s a nice little heat, though, I know lots of people who avoid spicy food and love this dip.

Now the original recipe calls for Swiss cheese, but I prefer a milder cheese in this. I like to use mozzarella or Monterey, whichever I have on hand. Use your favourite of the three and mix that along with the parmesan into the dip. Stir it all up, and bake it until it’s bubbly and hot. Serve it with tortilla chips or crackers such as Triscuits.

This is a dip that you definitely need to add to your list of things to try because it is unbeatable. As a self-proclaimed dip aficionado, I can say that! I’m always a fan of hot dips, but this one, in particular, is right up at the top of my party dip list!

Everybody’s Favourite Chicago Dip

An unbeatable appetizer that everyone wants this recipe for. Everybody's Favourite Chicago Dip is loaded with cheese, spinach and a little bit of spice! A must for your next gathering!

INGREDIENTS

  • 8 oz cream cheese, softened
  • 5 oz fresh spinach, chopped (1/2 a bag)
  • 2 cups mozzarella or Monterey cheese, shredded
  • 1 1/2 cups parmesan cheese, grated
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 cloves garlic, pressed
  • 1 tsp parsley
  • 1/2 tsp red pepper flakes
  • salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.

  2. Cream together the cream cheese, mayonnaise and sour cream. Add in spinach, garlic, parsley and red pepper flakes and mix. Taste and add salt and pepper as desired. Add cheeses and stir until fully combined.

  3. Spoon into a small casserole dish (8 x 8) and spread to edges. Bake for 25-30 minutes or until cheese is melted. Serve with crackers or taco chips immediately.
