Hi friends! Today’s recipe is a happy little marriage between breakfast and appetizers. Kicked Up Avocado Toast is a quick guacamole piled high on tangy sourdough topped with a couple fried eggs and it all comes together quickly and the flavors are unreal. The richness from the butter on the fried eggs cuts through the hint of citrus in the fresh guacamole and will knock your socks off. It’s breakfast heaven and may just be my new favourite, quick-fix breakfast.

Have an extra avocado? I always seem to have avocados that ripen at different times. Two will be ready and perfect for guacamole, or to slice and serve with crackers and cheese. My mother-in-law introduced me to this, it’s amazing. A Triscuit topped with a slice of cheddar and then a bit of avocado, delish! But, I still have one lone avocado waiting on the counter to be used.

I normally would just mash it into toast and call it a day, but this morning, I wanted to really kick this up, hence the name! I wanted more than just the regular, boring avocado toast. So, I whipped up a quick one avocado guacamole, spread that in a nice thick layer on top of hot buttered sourdough toast and topped the whole thing with perfectly fried eggs, sprinkled with everything bagel seasoning. Um, hello morning, have we met, I’m Kicked Up Avocado Toast, your new bff!

How to make your own Kicked Up Avocado Toast

I start by toasting my sourdough bread, as soon as it comes out, give it a good swipe of butter and set aside. Mash your avocado with a squeeze of lime. Then, I added literally pinches of garlic powder, salt and pepper. I tried to measure these out, but I think an 1/8 of a teaspoon would still be too much. So, use pinches and mix those in. Add a couple good shakes of your favourite hot sauce and a couple sprigs of cilantro, torn into small pieces. I like my guacamole with lots of tomatoes, so I add half a tomato, diced small. Once everything is combined, set this aside while you fry your eggs.

I like my yolks cooked through, but whatever your favourite fried version is, it will work. Even scrambled eggs would be a nice substitution. I used about a tablespoon of butter. I generally only fry my eggs in butter, I don’t like the way oil tastes on eggs and the butter really does add a rich flavour. Go with the butter, indulge on this one, trust me! I sprinkle the eggs with everything bagel seasoning, right before they finish cooking. Everything bagel seasoning is a must on fried eggs.

Now, layer the guacamole on the buttered toast. This one avocado guacamole is a quick adaptation of my aunt’s chunky guacamole, it’s hands down my absolute favourite! I’m going to share her recipe here soon, but if you’d like to give it a try sooner, you can check it out here. So, once you have a nice thick layer of the guacamole on the toast. It should all fit on one slice of toast. Top that with your everything bagel seasoned fried eggs and enjoy!

Now, armed with my Kicked Up Avocado Toast recipe, you won’t have to settle for boring old mashed avocado toast. Like I said before, the combination is literally the best of both worlds. You’ve got fried eggs with everything bagel seasoning which alone is fantastic. And then you layer that on top of fresh guacamole on top of tangy sourdough. I mean could breakfast get any better.

Kicked Up Avocado Toast

The best of both worlds, breakfast and appetizers come together in a fresh new version of mashed avocado toast. After one bite, Kicked Up Avocado Toast will hit the regular breakfast rotation, guaranteed.

INGREDIENTS

  • 1 slice sourdough toast, toasted
  • 2 tbsp butter, divided
  • 2 eggs
  • 1 avocado
  • 1/4 fresh lime, squeezed
  • 1/2 tomato, diced small
  • 2 sprigs fresh cilantro, torn into small pieces
  • 2 shakes hot sauce
  • 2 pinches garlic powder
  • 2 pinches sea salt
  • 1 pinch black pepper
  • 1 pinch everything bagel seasoning

INSTRUCTIONS

  1. Toast the sourdough bread in a toaster. When it’s done spread with one tablespoon of butter and set aside.

  2. Start frying your egg in the remaining butter, I flip my eggs, because I prefer a harder yolk, but fry the eggs the way you like best. Right before it’s finished, sprinkle eggs with a pinch of everything bagel seasoning.

  3. While your eggs are frying, make a quick guacamole by mashing the avocado with the lime juice. Once this is mashed well, mix in garlic powder, salt, pepper and hot sauce. Then stir in tomatoes and cilantro. Layer this on the hot buttered toast.

  4. Once the eggs are cooked, layer those on top of the guacamole and serve right away.
