Barbecue season is here! Finally! I feel like I’ve been cooped up for months. We are still not venturing too far past our little backyard, but just grilling a meal on the barbecue makes me feel like it’s a step outside our kitchen and a new environment. And this Lemon Pepper Grilled Chicken is the perfect meal to share on the patio.
Ok, so we don’t have a patio yet, but spending so much time in the backyard does have us dreaming about some do-it-yourself home improvements. It makes me excited for future summer nights. I envision Adirondack chairs, cozy blankets, a flickering fire pit and homemade s’mores, but in the meantime, let’s grill chicken on the barbecue and finish our meal with these Baked S’mores Cookie Cups.
This grilled chicken is packed with flavour. Seriously, pull out some chicken, and start marinating this dish. You won’t regret it. My cousin, Chantelle, was the first person to introduce me to this meal. I think my sister-in-law and I were staying with her and her husband and they treated us to pork chops marinated in this sauce and holy man it was gooood! Like really good. Like think about it for years afterwards, good.
She let me know that it was in our family cookbook. So, I dug it out a couple of weeks ago and get this, our cousin Chandra and our aunt had both submitted this recipe. Now, let me tell you, in this family, if we recommend something, you can be guaranteed it’s good. When two family members share the same recipe, there’s no question! Fire up the grill asap!
How to make Lemon Pepper Grilled Chicken
Not only is this chicken insanely good, it’s sooo simple! Pound out your chicken until it’s all the same thickness. If you have really large chicken breasts, cut them in half horizontally. Mix all the marinade ingredients and pour them into a ziptop bag, add the chicken and let it marinate for at least two hours.
Place them on the grill and let it cook on one side and then flip it over and grill it on the second side. One trick I like to use is to wait until the chicken releases on its own. If you can’t lift it off easily, it’s not ready. Once it’s seared, though, it’ll flip with no problems. Wait it out, I promise! Grill the chicken until it reaches 165 degrees F on an instant-read thermometer. Let it rest for five minutes and then serve.
We like to serve this chicken with Greek Pasta Salad and a vegetable. It’s so simple and tastes like a dream. Don’t wait like I did, put this recipe on your next week’s meal plan. Trust me, it’s now one of our summer favourites!

Lemon Pepper Grilled Chicken
A delicious and super easy marinade for a flavour packed Lemon Pepper Grilled Chicken. Perfect for summer barbecues.
INGREDIENTS
- 2 lrg chicken breast, sliced in half horizontal, making 4 thinner sliced chicken breasts
- 1/2 cup water
- 1/3 cup soy sauce
- 1/4 cup olive oil
- 2 tbsp lemon pepper seasoning
- 2 cloves garlic, pressed
INSTRUCTIONS

Mix together the water, soy sauce, oil, lemon pepper and garlic and pour into a ziptop plastic bag. Marinate the chicken for two hours.

Preheat the Grill to 400 degrees F.

Place chicken on the grill and let cook for 8-12 minutes, flip and cook for an additional 8-12 minutes or until cooked through.

Remove from grill and let sit for 5 minutes. Serve and enjoy!
