Have you ever tried making popcorn in a brown paper bag in the microwave? It takes popcorn making to a whole new level. This is the easiest way to make a batch of fresh popcorn. I’m not sure why, but the ease of this popcorn has me daydreaming about all kinds of flavour combinations. And with fall finally making an appearance, it feels like this Pumpkin Pie and White Chocolate Popcorn is totally appropriate to share with you today.

I’d like to let you in on something about myself, that you may not know. I’m a total sucker for all the cooking gimmicks. It’s a little embarrassing. I have way too many gadgets. I sold Pampered Chef for a little while, so I gathered quite a few kitchen tools. Sure, they’re all great, but they start to take up a lot of space. And to be honest, I have tools I’ve never used. It’s my weakness.

I have this innate ability to convince myself that every new tool will make me a better cook. Popcorn makers are no exception. I’ve used them all. Air poppers, a frying pan with a lid, the big pot with the crank handle, that you can never get clean. I’ve tried ’em. I can honestly say, I’ve avoided making popcorn because it would mean lugging out equipment and then clean up. Let me tell you a secret, a brown paper bag and the microwave is your new snack bff. This combo makes popcorn making so easy!

With the popcorn mastered, it feels like a whole new world of snacks opens up. It takes less than two minutes to pop a decent serving and now you have tons of time to play around with different spices and toppings. And really the options are endless. You’ll likely see a whole series on popcorn in the near future. In the last three days, in fact, I’ve made multiple bags of popcorn and I’m having a ton of fun experimenting with new flavours. This Pumpkin Pie and White Chocolate Popcorn is my favourite at the moment.

How to make Pumpkin Pie and White Chocolate Popcorn

Well, let’s make popcorn, easy popcorn! Pour a quarter cup of popcorn into a brown paper bag. I wouldn’t go much more than this, as you don’t want to overflow the bag. Fold the top over three times about an inch or so each time. Lay the bag fold side down on its side in the microwave. For me, a minute and 25 seconds is the perfect amount of time for me, but this will vary based on your own microwave. Listen for the popcorn to slow down once it slows to about three or four seconds between pops, stop it.

Scoop out the popcorn and leave the unpopped kernels in the bag. You can heat these more to try and pop them, but you should have a sufficient amount to make the recipe.

Next melt the butter, brown sugar and spices in a small saucepan until warm, about three minutes. I still wanted the feeling of the sugar, so I didn’t melt it completely. Pour that over the popcorn and stir until mixed well. Sprinkle with a bit of salt, Next, melt the chocolate wafers in increments in the microwave, stirring in between each, until melted. Spoon globs (for lack of a better word) of chocolate onto the popcorn and mix that round. This is a little messy, but the combination is worth it. Just continue stirring until it’s coated well.

I just finished describing this to my husband, because, of course, there wasn’t any leftovers for him to try, when he got home. This is becoming a running theme around our home, sorry hun! Pumpkin Pie and White Chocolate Popcorn

Pumpkin Pie and White Chocolate Popcorn is the perfect fall snack. Pumpkin Spices and Brown sugar are swirled with butter and then drizzled over big fluffy popped corn kernels and finished with a coating of white chocolate.

INGREDIENTS

  • 1/2 cup popcorn kernels
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 1/2 tsp pumpkin pie spice
  • 1/4 cup white chocolate melting wafers (I used Ghirardhelli)
  • salt to taste

INSTRUCTIONS

  1. Pour 1/4 cup of popcorn kernels into a brown bag, fold the top over three times, about an inch or so with each turn. Microwave for a minute and 25 seconds or until the popcorn slows to about 3 seconds between pops, this is a good indicator to pull it out of the microwave. Make two bags full.

  2. In a small saucepan, over medium heat, melt the butter and stir in the brown sugar and pumpkin pie spice. Cook for about three minutes, just until combined. Pour this butter mixture over the popcorn and stir together.

  3. Melt a 1/4 cup of white chocolate melting wafers in 15 second increments until it is melted and smooth. Drop spoonfuls on the popcorn and then stir this around until it's spread around and fully incorporated.

  4. Serve immediately.
