I came across a recipe, years ago, for fruit salsa. It was so good, I’ve been making a version of it ever since. The first time I made fruit salsa, it was for a girls camping trip. Fruit salsa is the perfect dip for summer days. Fresh fruit lightly sweetened, and totally addictive. Fruit salsa is well worth the little bit of effort it takes. And between you and me, you don’t have to dice this fruit as small, as I do. I like a small dice on my fruit for this. But it’s also a little neurotic on my part. I cut the blueberries and raspberries in at least half. I’m going to blame that on having a baby that’s now eating real food. These days, we’re cutting everything small, it’s habit. And to be honest, I like when all my pieces are roughly the same size for any type of salsa.

Once everything is cut up, I mix the fruit together with the apricot jam and brown sugar and stir until everything is well mixed.

How to Make Fruit Salsa

Summer in a bowl! Strawberries, raspberries, blueberrie and kiwis blend together to create the best fruit dip ever. Slightly sweet and perfectly fresh, this salsa will be a fast favourite.

Servings 8 servings

INGREDIENTS

  • 1 lb. strawberries
  • 3/4 cup blueberries
  • 6 oz raspberries (1 small container)
  • 2 kiwis
  • 2 tbsp apricot preserves
  • 1 tbsp brown sugar

INSTRUCTIONS

  1. Dice strawberries and kiwis into small pieces. If your blueberries are large, cut these in half or quarters. Cut raspberries in quarters.

  2. Mix fruit together with apricot preserves and brown sugar. Blend until completely mixed.

  3. Store in fridge.
