Maple, Bacon, Apple and Cheddar Grilled French Toast Sandwich

Maple, Bacon, Apple and Cheddar Grilled French Toast Sandwich

Yesterday was national sandwich day. I check my emails first thing in the morning and there it was, a message from a well-known sub shop announcing national sandwich day. What a delight! Obviously, I should make a sandwich, right?

Well, Ive been thinking about sandwiches ever since. I walked up and down the aisles in our grocery store yesterday afternoon brainstorming flavour combinations. I had some Brie in the fridge still and decided that would be my cheese layer but now what to add.

Bacon. You can’t go wrong with bacon. Brie and bacon sounds good already, don’t you think! I really wanted to do something different and had a great plan in mind but I couldn’t find one of the components, I’ll save that one for another day, when I can track down that elusive ingredient, stay tuned!

In the meantime, I happily settled on adding thin slices of apple and some maple syrup.

I came across this recipe for French toast grilled cheese from Kirbie’s Cravings earlier in the day and was inspired. All of my ingredients immediately screamed breakfast, and obviously sandwiched between two slices of French toast would make the most sense. Not to mention a winning sandwich.

Maple, Bacon, Apple and Cheddar Grilled French Toast SandwichThis morning, my husband took over and this mama got to sleep in. I woke up well-rested and hungry. Already imagining my breakfast grilled cheese. I walked into the kitchen, opened the fridge and found my Brie had spoiled. In the overflowing cheese drawer, I found an outdated fontina, I was excited about that combination until I realized it wouldn’t work either. Plan foiled again. Then staring me in the face was a giant brick of sharp cheddar, well that would have to do.

Pretty classic combination in cheddar and apples. The morning was looking up. So there it is bacon, sharp cheddar cheese, thin slices of apple all drizzled with maple syrup. This is a sandwich worthy of national praise!
