Roasted Vegetable Pita Sandwiches are my favourite vegetarian sandwich. I’m not vegetarian. I tried once, but bacon brought me back, true story. This sandwich though, if I had to choose only one sandwich for the rest of my life, it would be this one. It’s so good. It’s bright and packed with flavours. The roasted veggies are marinated overnight to pack maximum flavour and do they ever! It’s one heck of a bite. Soft pita bread is loaded full of creamy hummus, Mediterranean roasted vegetables and topped off with salty feta.

This sandwich, is the reason, I make Mediterranean Roasted Vegetables as often as I do. I make this side dish about once every two weeks and I can’t wait to turn the leftovers into this dream boat of a sandwich. The vegetables are roasted so they have a slight caramelization but yet, they’re still light and fresh. The Greek seasonings on the veg is out of this world.

The pita bread is the perfect vessel for this sandwich, lots of room for extra healthy goodness. Load up each pocket with tons of rainbow coloured veggies and some hummus and you’ve got yourself a very filling meal. A pretty sandwich that will carry you through your day and well into the evening.

I do have to caution you though, this is a messy sandwich. It’s the type that when you bite into it, chances are, chunks of vegetables will fall, and the hummus will creep out the sides, but you’ll still love this meal. It’s totally worth the mess. The best sandwiches usually are!

How to make Roasted Vegetable Pita Sandwiches

These sandwiches are super easy. They use leftovers from my Mediterranean Roasted Vegetables recipe. So, you’ll need a batch of those, but they’re super easy to make. If you decide to make the roasted vegetables for this sandwich only. Firstly, I don’t blame you, I do the same thing! Secondly, just make sure and marinate your veggies the night before, so they get all that great flavour, from the marinate, soaked in.

I prefer these sandwiches with warm veggies. So, if you’re making the vegetables the same day (after they’ve marinated overnight), just roast them up a couple hours before you plan to serve these pita pockets, so they’re not pipping hot when you try to assemble them. I don’t heat up the hummus or feta or the pita pocket, for that matter, I just prefer the veggies warm. I find, the contrast between the warm veggies and cold hummus and feta compliment each other so well.

So, to make these sandwiches, split a pita bread in half and then carefully pry it open to create a pocket. These can tear easily, so take your time here. Next, I smear the sides with hummus, gently pack in the veggies and then sprinkle the works with feta. If you really want to up the ante, drizzle with a bit of balsamic vinegar. And you have yourself a really earthy sandwich.

Roasted Vegetable Pita Sandwiches

Loaded with veggies, this Roasted Vegetable Pita Sandwich is a vegetarian's dream meal. Packed with flavour, it'll satisfy your weekly sandwich craving.

INGREDIENTS

  • 1 pita bread, cut in half and gently split open
  • 1 cup Mediterranean Roasted Vegetables (see note)
  • 4 tbsp roasted garlic hummus (I use Sabra)
  • 4 tbsp feta cheese, crumbled
  • salt & pepper, to taste

INSTRUCTIONS

  1. Cut pita bread in half and then gently split each half, creating a pocket.

  2. Spread two tablespoons of hummus inside each pocket, followed by 1/2 cup of the Roasted Mediterannean Vegetables and then sprinkle with 2 tablespoons of feta cheese per side. Season with salt and pepper.

  3. Optional: Wrap in tin foil and heat in a 350 degree oven for ten minutes or until warmed through. Or microwave for about 30 seconds to warm slightly.
