Sweet and Savoury Fully Loaded Breakfast Sandwich

This Sweet and Savoury Fully Loaded Breakfast Sandwich is a total win. A fill-you-up-all-morning kind of sandwich. The classic egg and bacon combo get a sweet twist with apples and peanut butter all sandwiched between an english muffin.

Everybody loves a hearty breakfast sandwich, amiright? I’m talking the fill-you-up-all-morning kind! This Sweet and Savoury Fully Loaded Breakfast Sandwich is exactly that and will hit the spot, trust me.

After putting this surprisingly delicious combo together, I wasn’t sure it would be a hit, but it’s a total win.

It all came together one day at the lake. That’s what we northwesterners call the cabin or cottage. My parents have a place just a short boat ride from town, and are the epitome of great hosts. There’s always an open invitation for friends and family to join them any weekend.

This particular morning, their good friends were in charge of breakfast. Generally, each couple will cover a meal for the day. They decided to go with egg sandwiches on english muffins, their version of the tasty McDonald’s staple.

I put in a special request for a solid fried egg. If you’re like me, then you are not a fan of dippy eggs, (the term my family uses), and that’s what was being served. I may not like over-easy eggs, but I love the way a yolk breaks open and coats whatever it’s being served with, it always looks so good. And, in my mind, I’m sure it checks all the delicious boxes. If only I could bridge the gap between my mouth and my brain on this one, then life would be good.

So, with my solid fried egg in hand, I began looking at the extras. Now, for some reason there is always an abundance of toast and bacon.  The table starts with a set meal (egg muffins) and as breakfast progresses, out come the jams and nut butters. I wanted a sandwich but something a little different.

So, with an English muffin, bacon, and an egg as my base, I threw caution to the wind and smeared on some peanut butter. Pretty sure this is where my dad started reminiscing about his childhood PB and bacon sandwiches. Perhaps, it was always in my DNA to go this route with my breakfast sandwich.

I wasn’t done yet though. So, on a whim, I grabbed an apple. I stacked everything including thin slices of apple together and took my first bite.

Wow! I was smitten. Not only is this is a sandwich I could eat on the regular, and now do, but it’s loaded with deliciousness. The peanut butter coats everything in a warm, lightly sweet sauce but it’s the addition of savoury bacon and crisp apples that make this truly unforgettable.

Make this sandwich, just once, and I guarantee, it’ll become a favourite on your breakfast rotation. Sometimes, you just need a good solid breakfast and this sandwich definitely delivers on that and will hold you over well into the afternoon. The surprising flavours are a knock out and you’ll be glad you gave this odd combo a try. Trust me!

Sweet and Savoury Fully Loaded Breakfast Sandwich

INGREDIENTS

  • 1 english muffin
  • 1 egg
  • 2 slices bacon
  • 1 tbsp peanut butter
  • 3 slices green apple

INSTRUCTIONS

  1. Fry or bake the bacon until fully cooked, I prefer mine extra crispy. Fry the egg as desired. 

  2. While the bacon and eggs are cooking, slice the apple thin. Toast the english muffin and butter both sides with peanut butter. Stack all the ingredients between the english muffin and enjoy!
