So I came across some cranberry and Turkey wraps in the grocery store the other day. They looked amazing. I’ll be sharing my copycat recipe in the next couple of weeks. But the kicker for me was that these wraps are served with a Vidalia onion vinaigrette. And I knew, it would be good. So, before I even set out to make the wraps, I whipped up my own version of a Sweet Onion Vinaigrette.

I don’t even know if I’ve ever had an onion dressing in my life, but I’m so glad I gave it a go! And you guys it is so, so good. Seriously, I’m going to start making my own salad dressings because the real deal is always so much better than anything bottled, jarred, etc.

My advice is to make this in your high powered blender. I tried it twice, the first time I tried just a quick blend in the Vitamix, but by morning it had separated. I tried shaking it in a mason jar like a madwoman to blend it up, but it just wasn’t right. So, I remedied that by blending the living daylights out of the second batch and it was perfect!

I did a little research, and I learned that you basically have to whip this to within an inch of its life for it to, really stay blended. Emulsified is the technical term for it. The easiest way to achieve this is to blend everything but the oil together, then slowly, while the blender is going, pour in the oil and then blend it until it thickens up a bit. This second time, it was perfect, it tasted amazing and stayed completely blended.

So, obviously this is great on a salad and I’m going to use this as a dip for those upcoming Turkey wraps, but I could also see myself dipping my french fries in this. I’m a huge fan of the sweet, salty combo, and it would be a lovely sauce for most salty fried foods. When I think dipping sauce, I go straight for fries. They’re the perfect vessel for all dips in my opinion. I’m that girl.

How to make Sweet Onion Vinaigrette

Let’s just talk for a minute about how to make this dressing. First of all, use a blender, it’ll save you a ton of whisking and sore forearms. Let the machine do this one, trust me!

Start by adding everything except the oil into the blender. Whip this up until the sugar has dissolved and the onions are super fine. Then slowly pour the oil through the hole in the lid. Keep the blender going on slow while you do this. Once that’s all incorporated, blend this for a few more minutes until the vinaigrette thickens. That’s it! It’s so simple and it keeps in the fridge for weeks.

I have to say, I’m so impressed with this vinaigrette. This is the first vinaigrette I’ve made and I’m totally hooked. I want to make all the salad dressings. It’s so simple and I love that I know exactly what’s going into them. I can adjust the seasonings to my own tastes and it’s so fresh and delicious! I’m a convert. Sweet Onion Vinaigrette

A tasty vinaigrette, loaded with a gentle onion flavour backed with just enough sweetness to make this irresistible. Try it over a bed of fresh greens, you won't regret it.

Servings 2 cups

INGREDIENTS

  • 1/2 cup sugar
  • 1/2 cup sweet onion, diced
  • 1/4 cup apple cider vinegar
  • 2 tbsp mayonnaise
  • 1/4 tsp salt
  • 1/4 tsp mustard powder
  • 1/8 tsp celery salt
  • 1/4 tsp poppy seeds
  • 3/4 cup canola oil

INSTRUCTIONS

  1. Add all the ingredients, except the oil, into a high-power blender (such as a Vitamix). Blend for about 30 seconds or until the sugar is completely disolved and the onions are minced.

  2. Remove the cover from the lid, and slowly pour in the oil. Blend this for about 3-4 minutes more or until the vinaigrette has thickened.

  3. Store in a mason jar in the refrigerator. Keeps for weeks.
