White Chocolate Orange Muffins

I'm sure you know the theme song to Married with Children, right? Would you believe it's the inspiration for these White Chocolate Orange Muffins? I got the theme song stuck in my head and by chance changed the words "love and marriage" to orange and chocolate and knew at that moment I needed to create a recipe that combined the two. These muffins are bursting with orange flavour and just the right amount of chocolate, a must bake!

My friends, I’ve got a treat for you today! These White Chocolate Orange Muffins are delicious. You may laugh at me, but this blog post started out all backwards. You see, I normally decide what I want to create, test the recipe, photograph said recipe, write the blog post and then figure out social media. Now, in this case, it started with social media.

Somehow, I got this particular theme song stuck in my head. And it prompted the whole orange and chocolate combo. I bet you’re wondering what song could possibly inspire a recipe. Are you ready for it? As soon as I share it, you’ll be singing, too. I feel like I should give you clues though, test your 80s trivia knowledge. It’s a tv show about a family. The father is a shoe salesman, the mother’s name was Peg, they had two children. Did you guess it yet?

It’s Married with Children. Even If you didn’t guess it, I bet you’re singing the theme song now. Anyways, I came across the series on Hulu and instantly I was singing orange and chocolate, orange and chocolate, go together like a chain and locket (it needs work, I know). But I knew that could catch a few people’s attention and that’s when I decided I had to come up with a muffin incorporating the two.

I mean really, it seems a natural marriage between orange and chocolate. It’s my dad’s favourite combo. Every year at Christmas, he gets a Terry’s Chocolate Orange or some variation of an orange and chocolate treat. We’re all fans if I’m being honest, but I am really curious to find out what my dad, the chocolate orange connoisseur, thinks of these tasty baked goods!

Now, let’s talk about these muffins for a minute. The chocolate is subtle and really lets the orange flavour pop. I was in the mood for something springy and this treat is bursting with orange flavour. I opted for white chocolate chips in these, I think they compliment the orange really well and keep the muffins clean and pretty.

How to make White Chocolate Orange Muffins

Start with zesting and juicing the oranges. Zest the oranges into a bowl with the sugar and mix well, Add in the rest of the dry ingredients (except the white chocolate chips, you’ll fold these in at the end) and whisk well. Mix the white chocolate chips with a bit of flour, so they don’t sink. I forgot this the first time and then overbaked them as well and ended up with this weird crispy chocolate bottom. Set the floured chocolate chips aside.

In a second bowl, pour in the freshly squeezed orange juice along with all the wet ingredients. Mix until everything is fully blended. Pour this into a little well in the middle of the dry mixture and stir until just combined. Don’t over mix this though. Gently fold in the white chocolate chips and then pour into a greased muffin tin and bake.

While those are baking, make the glaze. Heat the chocolate chips and butter in 15-second increments in the microwave, stirring in between each set. Stir in the orange juice and scalded milk and mix until smooth. Stir in the zest and then drizzle over the warm muffins.

You guys, these muffins are so moist and full of orange flavour with just the perfect amount of white chocolate to make these feel indulgent. Who would’ve ever thought a muffin this good would be inspired by a theme song. I just have one question, are you still singing it?

Orange and White Chocolate Chip Muffins

Light and fluffy muffins, bursting with orange flavour, with the addition of white chocolate chips and drizzled in a white chocolate glaze..

INGREDIENTS

  • 3/4 cup white sugar
  • 2 tbsp orange zest (about 2 large oranges)
  • 2 cups + 1 tsp flour, divided
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sour cream
  • 1/2 cup fresh squeeze orange juice
  • 1/3 cup canola or vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips

White Chocolate Glaze

  • 1/4 cup white chocolate chips
  • 1 tsp butter
  • 1 tbsp whole milk
  • 1 tsp orange zest
  • 1 tsp orange juice

INSTRUCTIONS

  1. Preheat oven to 375 degrees F.

  2. In, a large bowl, stir together the orange zest and sugar. Add in the flour, baking soda, baking power and salt, sitr to combine.

  3. In a seperate bowl, whisk together the sour cream, orange juice, oil, eggs and vanilla.

  4. Make a well in the dry ingredients and gently pour in the wet mixture. Stir until just combined.

  5. Toss the white chocolate chips with the one teaspoon of flour. Fold these into the batter and then divide the batter into a 12 cup prepared muffin tin.

  6. Bake for 23-27 minutes or until a toothpick inserted into the centre comes out clean.

White Chocolate Glaze

  1. In 15 second intervals, melt the white chocolate chips and butter. In a seperate bowl, scald the whole milk, and add that along with the orange juice into the melted chocolate. Stirring until it's smooth, mix in the zest. Drizzle over muffins.

  2. Store in an airtight container for a couple days or freeze for up to two months.
