A great valentine breakfast for all your loved ones.
Preheat oven to 400 degrees F.
Mix strawberry jam with cinnamon and cornstarch until well mixed. Set aside.
Unroll pie crust. Using a heart shaped cookie cutter, cut out nine hearts and place them on a parchment lined cookie sheet.
Spread a small amount of the jam mixture on each heart. Leaving about a 1/4" around the edge of the pie crust. Brush edges with beaten egg.
Cut out nine hearts from the second pie crust and place these over the first batch. Using a fork seal the two crusts together. Finally, poke your fork into each of the pop tarts a couple times to vent.
Bake for 15 minutes. Remove and let cool.
Make icing while pop tarts are baking. Mix together icing sugar, 1 tbsp of each strawberry jam mixture and heavy whipping cream. Add extract and mix until a glaze forms, adding extra cream and jam until it's a spreadable consistency.
Glaze each pop tart with about 1-2 tbsp of icing, whichever you prefer and then top with sprinkles.
