Summer Rhubarb Slush is the perfect summer drink. It will quench your thirst and satisfy your tastebuds. Tart rhubarb is mellowed out with a bit of sugar and raspberry jello. Up the ante and add a shot of gin or vodka.
Chop rhubarb into small chunks. Place in a large pot, add water, sugar and lemon and bring to a boil. Boil for 20 minutes.
Strain pulp through a mesh colander and save the liquid. Discard the pulp. Add the liquid back to the rinsed pot and bring back to a boil and add the jello powder. Stir until dissolved. Remove from heat.
Pour into an ice cream pail and freeze, stirring occasionally until slush has formed.
To serve, add a scoop or two of the slush to a glass and fill the rest with Sprite or 7-Up. Add a shot of gin or vodka if you desire.
