Summer Rhubarb Slush

Summer Rhubarb Slush is the perfect summer drink. It will quench your thirst and satisfy your tastebuds. Tart rhubarb is mellowed out with a bit of sugar and raspberry jello. Up the ante and add a shot of gin or vodka.

INGREDIENTS

  • 7 cups rhubarb about 16 stalks
  • 9 cups water
  • 2 cups sugar
  • 1/2 cup fresh lemon juice about 2 whole lemons
  • 1-6 oz box raspberry jello
  • Ginger Ale, Sprite or 7-Up to fill glass
  • Gin or Vodka as desired

INSTRUCTIONS

  1. Chop rhubarb into small chunks. Place in a large pot, add water, sugar and lemon and bring to a boil. Boil for 20 minutes.

  2. Strain pulp through a mesh colander and save the liquid. Discard the pulp. Add the liquid back to the rinsed pot and bring back to a boil and add the jello powder. Stir until dissolved. Remove from heat.

  3. Pour into an ice cream pail and freeze, stirring occasionally until slush has formed.

  4. To serve, add a scoop or two of the slush to a glass and fill the rest with Sprite or 7-Up. Add a shot of gin or vodka if you desire.
