INGREDIENTS

Homemade Greek Seasoning

  • 2 tsp coarse sea salt
  • 2 tsp oregano
  • 1 tsp basil
  • 1 tsp parsley
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1/2 tsp marjoram
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

Mediterranean Roasted Vegetables

  • 8 oz button mushrooms
  • 1 pint cherry tomatoes
  • 3 peppers (red, green, yellow)
  • 1 zucchini
  • 2 red onions
  • 1/4 cup olive oil
  • 2 tsp Homemade Greek Seasoning
  • 2 tbsp balsamic vinegar
  • 1 lemon, juiced
  • salt & pepper, to taste

  1. Mix all the ingredients together. Store in an airtight container.

Mediterranean Roasted Vegetables

  1. Prepare the vegetables by cutting the mushrooms in half, the peppers in 1" chunks, the zucchini in 1/2" rounds or smaller, the red onions in wedges and leave the tomatoes whole. Add all the cut vegetables into a large zip-top bag.

  2. Add the rest of the ingredients to the zip-top bag and rotate to coat all the vegetables. Leave this to marinate overnight for maximum flavour.

  3. Preheat oven to 400 degrees F.

  4. Line a large baking pan with parchment paper or use a stoneware pan and lay the vegetables out flat and cook for 45 minutes. Be very careful when you open the oven as there will be lots of steam.
