A traditional meatloaf made even better with a flavourful tomato herb sauce. A recipe so good, you'll quickly update your weekly meal plans to include this main dish.
Preheat oven to 350 degrees F.
In a skillet, heat olive oil over medium heat. Saute onions, mushrooms and garlic until onions are transparent. Stir in the crushed tomatoes, tomato paste, salt, pepper, and sugar until everything is well combined. Reserve a cup and a half of the sauce for the meatloaf mixture.
After you've removed the cup and a half, stir in the water and basil. Cover and simmer for about an hour, stirring occasionally.
Meanwhile, combine the meat loaf ingredients with the reserved cup and a half of tomato herb sauce. In a roasting pan, using your hands mold the meat mixture into a loaf shape. Bake for 45 minutes.
Remove and drain meatloaf. Top with a cup of tomato herb sauce and bake for an additional 15 minutes or until fully cooked. Spoon remaining tomato herb sauce over individual slices.
