Pulled Pork Grilled Cheese

A messy grilled cheese sandwich, but so worth the cleanup. Tasty pulled pork with a hit of heat, gooey melted cheese, and pickles to brighten it all up are sandwiched between slices of sourdough bread. And then, of course barbecue sauce to dip, cause what would a pulled pork grilled cheese be without it. It's just like your best friend, no need to be polite or pretty. It doesn't mind if you get comfortable and dig in!

INGREDIENTS

  • 4 slices sourdough bread
  • butter
  • 2 cups pulled pork, or more (see note)
  • 4 slices pre-sliced Colby cheese (or enough to cover the top and bottom of the sandwich)
  • 1/2 dill pickle slices
  • barbecue sauce for dipping (your favourite)

INSTRUCTIONS

  1. Butter the outside sides of each slice of sourdough.

  2. Layer two slices of Colby cheese or enough to cover the bottom slice of sourdough. Top with a cup of pulled pork, pickles (patted dry with a paper towel) and finish with two or more slices of Colby. Top all layers with another slice of sourdough.

  3. Place the buttered side of each sandwich into a preheated pan. Over medium heat cook until the cheese is melted. Keep an eye on the sandwich, they can burn if left unattended. Flip to fry the second side and cook until cheese is all melted.

  4. Serve with your favourite barbecue sauce for dipping.
