Butterscotch Layered Rice Krispie Squares

One of my Mom's favourites from her childhood. It's a combination of confetti squares and Rice Krispie Squares and it's delicious! Peanut butter and butterscotch layered between a classic rice crispy treat, creates one irresistible bar! I dare you to try to stop at one bite!

INGREDIENTS

Butterscotch layer

  • 3 tbsp butter
  • 1/2 cup peanut butter
  • 3/4 cup butterscotch chips (like Nestle)

Rice Krispies

  • 12 oz marshmallows, large
  • 6 tbsp butter
  • 6 cups Rice Krispies cereal
  • 1 tsp vanilla

INSTRUCTIONS

  1. Grease an 8'x8' square baking pan, set aside. Measure out all the ingredients.

  2. In a small pot, over medium-high heat, melt together three tablespoons of butter along with the peanut butter until smooth. Stir in butterscotch chips and continue stirring constantly until the chips are fully melted and the sauce is smooth. Set aside, but continue to stir every couple of minutes while making the Rice Krispie bars.

  3. In a large pot, over low heat, melt the remaining butter and stir in the marshmallows. Stir constantly until the marshmallows melt and stir in the cereal until it's fully coated. Divide the mixture in half and press half into the bottom of the greased baking dish.

  4. Gently pour the butterscotch sauce over the cereal base.

  5. Dot the butterscotch layer with the remaining cereal mixture, gently press the Rice Krispies together being careful not to press too hard. This will cause the butterscotch to overflow. Once the cereal is covering the butterscotch layer, cover and chill for at least an hour or until set.

  6. Cut into squares and serve.
