Greek Pasta Salad

This cold Greek Pasta Salad will take you right back to summer. It's perfectly seasoned with a flavourful dressing, fresh vegetables, fun bowtie pasta and salty feta! Summer in a bowl!

INGREDIENTS

  • 12 oz. Farfalle pasta, cooked according to package
  • 1 English cucumber, half slices
  • 1 pint grape tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup kalamata olives, sliced
  • 4 oz feta cheese
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1/2 cup green onions, sliced
  • 2 tbsp fresh parsley, chopped
  • 1 1/2 tsp dijon mustard
  • 2 cloves garlic, minced
  • 2 tsp basil, dried
  • 1 tsp dill, dried
  • 1 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp pepper
  • 1/2 tsp sugar

INSTRUCTIONS

  1. Boil the pasta in heavily salted water according to the package directions. Drain and rinse in cold water.

  2. While the pasta is boiling make the dressing. Whisk together the oil, vinegar, mustard, garlic and spices until fully combined, stir in the parsley and green onions.

  3. Slice the cucumbers in half lengthwise and then in slices. Slice the tomatoes and olives and dice the onions. Mix these into the pasta along with the feta cheese and drizzle the dressing over the top of everything. Mix until fully combined.

  4. Keep refrigerated.
