Cilantro Lime Grilled Chicken

INGREDIENTS

  • 4 chicken breast, boneless, skinless
  • 2 limes, juice of
  • 1 cup cilantro
  • 1 jalapeno, seeded and roughly chopped
  • 1/4 cup red onion, roughly chopped
  • 1/4 cup olive oil
  • 2 cloves garlic, peeled
  • 1 tsp salt
  • 1/2 tsp black pepper

INSTRUCTIONS

  1. Pound the chicken into an even layer.

  2. In a small food processor, blend all the ingredients except the chicken until completely blended.

  3. Place chicken into a zip-top plastic bag and pour the marinade over that top. Seal the bag and massage the chicken to make sure it's well coated. Refrigerate for 8 to 48 hours.

  4. To cook preheat barbecue on high. Reduce heat to medium and grill one side of the chicken for about 8-12 minutes, flip and grill the other side, until fully cooked.

  5. Remove from the grill, cover with foil and let rest for five minutes.
