A simple Lemon Garlic Pasta that comes together about as fast as it takes to boil the spaghetti! Don't be fooled by how easy this recipe is, the flavour is beyond indulgent and will impress even the toughest critic. Garlic and lemon and parmesan meld together in a perfect sauce to pair with hot spaghetti, spinach and roasted almonds. A perfect side or main dish if you're looking for a meatless Monday meal!
Boil the spaghetti according to package directions. Drain and reserve 1/4 cup of the pasta water.
A couple minutes before the spaghetti is finished cooking, start melting the butter in a medium pan over medium heat.
Once the butter is melted, add garlic and let cook until just fragrant about a minute. Stir in spinach and let wilt.
Add the cooked spaghetti and mix together. Sprinkle with parmesan and salt and pour in the reserved water.
To finish, stir in the almonds and juice the lemon over the pasta. Serve hot.
