Also called hole in one and toad in a hole, whatever you call it, this version is extra tasty. Loaded with sausage, peppers and onions and then nestled in a thick slice of bread. Crack an egg over top of the sausage mixture and then finish it off with lots of melty colby jack. A breakfast of champs!
In a medium pan over medium heat, fry the sausage, crumbling it as it cooks. When that's cooked through, add in the onions and pepper and cook until they're soft.
White the sausage is cooking, cut six 1 inch thick slices from the loaf of bread. Butter both sides and then using a biscuit cutter, cut a circle from the centre of each slice of bread. Keep the holes and fry those along with the egg in a holes.
In another pan, over medium-low heat place a slice of bread, add two tablespoons of the sausage, onion and pepper mixture, spread this around inside the hole and then crack in one egg. Repeat for all six slices.
Let this cook for about 4-6 minutes on one side, then gently flip it over and cook for an additiional 4-6 minutes.
Next, sprinkle a little bit of cheese on one side and once it starts to melt, flip it over so that it forms a crispy cheese crust. On the second side, sprinkle a bit of cheese again and once it melts flip it over and let that side crisp up as well.
Serve immediately.
