Panera Inspired Steak Salad

All the flavours of the steak and arugula sandwich at Panera Bread turned into a deliciously filling salad.

INGREDIENTS

  • 2 handfuls arugula and spinach mix
  • 2 handfuls spring mix
  • 1/2 lb. sirloin tip steak, thin cut, cooked to your liking
  • 1 oz. goat cheese
  • 1 tomato, sliced
  • 1/4 cup pickled onions, see notes
  • 1/4 cup sour dough croutons

Mustard Horseradish vinaigrette

  • 1/4 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 1 tbsp dijon mustard
  • 1/4 tsp creamy horseradish
  • salt and pepper to taste

Creamy Garlic dressing

  • 1/2 cup sour cream
  • 1/4 cup whole milk
  • 1/4 tsp salt
  • 1/4 tsp dill
  • 1/4 tsp parsley
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp black pepper
  • 1/8 tsp cayenne pepper

INSTRUCTIONS

  1. Put all the ingredients for the mustard horseradish vinaigrette in a mason jar with a tight fitting lid and shake until mix well, about 1 minute.

  2. Mix all the ingredients for the creamy garlic dressing in a small bowl and whisk until combined.

  3. Toss the two types of lettuce together. Layer on slices of tomatoes, steak and pickled onions. Sprinkle on croutons and goats cheese. 

  4. Pour on your desired amount of vinaigrette and mix salad. Drizzle on desired amount of creamy garlic dressing. Enjoy!

RECIPE NOTES

To make the sourdough croutons, I just pan-fried a couple slices of cubed and buttered sourdough bread, but you could use any version of crouton you like.

The mustard horseradish vinaigrette does have a bite to it, if you'd prefer a milder dressing reduce the horseradish to 1/8 tsp or omit it all together.
