All the flavours of the steak and arugula sandwich at Panera Bread turned into a deliciously filling salad.
Put all the ingredients for the mustard horseradish vinaigrette in a mason jar with a tight fitting lid and shake until mix well, about 1 minute.
Mix all the ingredients for the creamy garlic dressing in a small bowl and whisk until combined.
Toss the two types of lettuce together. Layer on slices of tomatoes, steak and pickled onions. Sprinkle on croutons and goats cheese.
Pour on your desired amount of vinaigrette and mix salad. Drizzle on desired amount of creamy garlic dressing. Enjoy!
To make the sourdough croutons, I just pan-fried a couple slices of cubed and buttered sourdough bread, but you could use any version of crouton you like.

The mustard horseradish vinaigrette does have a bite to it, if you'd prefer a milder dressing reduce the horseradish to 1/8 tsp or omit it all together.
