Quick Pickled Red Onions are a topping fit for a king. They are quick, easy and delicious. The mellow zip adds such a lovely flavour to anything they're added to.

INGREDIENTS

  • 1 medium red onion, sliced
  • 1 cup white vinegar
  • 1 tbsp salt
  • 2 tbsp sugar
  • 1 tsp peppercorns
  • 1 bay leaf

INSTRUCTIONS

  1. In a small pot, stir together all ingredients. Cover and bring to a boil. Let mixture boil for two minutes and remove from heat. Pour into a glass bowl and let cool to room temperature. Store in a glass mason jar.
