Baked S'mores Cookie Cups are a fun update to the classic summer snack. A graham cracker infused cookie cup, filled with milk chocolate ganache and topped with a toasted marshmallow is perfect all year long. No need to haul out the firewood, these are made right in the oven.

These little S’mores Cookie Cups are all fun. They’re cute and taste just like the real deal. And really, how could you not love the flavours of our beloved s’mores, baked right into a cookie? No need for a bonfire, you can make the toasted marshmallow treat right in your own oven, and now, all year round.

I’ve been craving s’mores for weeks now. The sweet treat is always such a fun dessert, in the warmer months. Sitting around a bonfire, or fire pit, roasting marshmallows is summer at its finest. A tradition, I can’t wait to share with my kids. However, we don’t have a fire pit, nor do I want to sit out in the humidity. Roasting marshmallows is for cool summer nights.

S’mores are for the nights after you’ve been swimming all day. You’ve finally put on something dry, usually sweats, there’s a chill in the air, but the fire is hot and crackling. It’s quiet, except for the sound of the gentle waves against the shore. You’re armed with a twig trimmed to a point and your marshmallow is ready and set. These are the nights you make s’mores, can you see it?

If, like us, you don’t have a lake to visit every weekend, or a fire pit. I found this fun post online at Nest of Posies on how you can turn a terra cotta pot into a mini s’mores cooker. I can’t wait to give this a try and get back to summer traditions. There might not be a cool lake nearby or a fire pit in my backyard, but I can adjust the a/c and pretend, right? OR we can all make these S’mores Cookie Cups, because, dare I say this, they might just be better than the original?!

Now, in full disclosure, I’ve never been the biggest fan of graham crackers, they’re just too hard for me, a little too hard for that gooey bite. Besides, isn’t a s’more meant to be pure comfort? I want a soft cookie, like these cookie cups, that have actual graham cracker crumbs mixed in. You still get the flavours of the real deal, but a version that is soft enough to indent and fill with a little pool of milk chocolate. Top it all with a toasted marshmallow and you’ve got yourself a new better twist on the summer classic.

How to Make S’mores Cookie Cups

Start by making your cookie dough. Cream together the brown sugar and butter until it’s nice and fluffy. Then, add in the vanilla and egg and beat until it’s all combined. I stir together all my dry ingredients, including the graham cracker crumbs and then roll a tablespoonful into a ball and put them into a mini muffin tin. Bake the cookies for nine minutes or until golden brown and then remove them from the oven and immediately press the back of a rounded teaspoon into the cup, essentially creating an indent.

While the cookies are baking, make the milk chocolate ganache. I scald the milk in the microwave, just until it starts to bubble and then pour it over my chocolate chips. Let the mixture sit for a minute and then stir and stir and stir until it’s all melted and smooth. Next, using the same measuring spoon, add a full teaspoon to each indent, without overflowing it.

Finally, top each chocolate filled indent with a marshmallow that’s been cut in half horizontally. Essentially, you’ll be creating two squatty marshmallows, when they are cut. Toast these under the broiler until they puff up and turn golden brown. Apparently, marshmallows can catch fire in the oven! It’s never happened to me, but I never leave these unattended and I always watch them very closely. It only takes a couple minutes to get the marshmallows golden and toasted. Right out of the oven is the best way to eat these. In fact, the next day, I will pop a couple of these bites into the microwave for a few seconds just to warm them up.

This is a fun new twist on the original s’more. One that will have you enjoying the summer treat, all year long. It’s the best of both worlds, ditch the hard graham crackers, for a softer cookie cup but keep all the flavour, and fill it with chocolate and top it with a toasted marshmallow. It’s a delicious twist on a s’more, maybe even better than the original.

Summer's favourite bonfire snack, just got a makeover. Baked S'mores Cookie Cups are to die for. A graham cracker infused cookie cup base, filled with milk chocolate ganache and topped with a toasted marshmallow. Dare I say, better than the original?

INGREDIENTS

  • 3/4 cup brown sugar
  • 1 cup butter
  • 1 3/4 cup flour
  • 3/4 cup graham cracker crumbs
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 cup milk chocolate chips
  • 1/2 cup heavy cream
  • 24 marshmallows cup in half

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.

  2. Cream brown sugar and butter. Beat in egg and vanilla until well mixed. Stir together dry ingredients and then mix this into the wet mixture, until fully combined.

  3. Roll tablespoonfuls into balls and place in mini muffin tin. Bake for 9-10 minutes until golden brown. Remove from oven and press the back of a teaspoon into each cup to create an indent.

  4. While cookies are baking, make the ganache. Scald heavy cream and pour into bowl of chocolate chips. Let sit for a few minutes. Mix until fully combined and set aside.

  5. Pour 1 teaspoon of ganache into each indent in the cookie.

  6. Cut the marshmallows in half horizontally, so you essentially have two short marshmallows. Top each cookie with a halved marshmallow and place under the broiler for about 2 minutes or until the marshmallow is toasted. Watch the marshmallows closely as they can burn quickly and catch fire if left unattended.

  7. Drizzle with extra ganache if desired. Remove from pan when cool. Serve warm.
