    Grandpa’s Cabin Pancakes

I've been looking for a homemade pancake recipe for years. I'm talking about a recipe that is tried and true. One that you make so often, you no longer need the paper it's written on. That's my goal for pancakes. I have struggled to find a recipe that truly shines, but that ends here. This year, I put together a list of foods that I want to cook, bake or create. Items that I've always put off because they're intimidating or time consuming or I just have never been able to pull it off. Pancakes is on that list and they're about…

    Strawberry and Cream Cookie Cups

Valentine's Day is almost here. Do you know what you're making for dinner, how about dessert? I have no idea what we'll do for supper, well actually, it'll probably be some sort of takeout. Romance to me when you have two little kids and dinner is delivered by your handsome husband. I'm secretly hoping for pizza, or maybe not so secretly. I can proudly say, I've got dessert covered with these amazing Strawberry and Cream Cookie Cups. I've been thinking about these cookies since I came across Lindor's Valentine's Day Strawberry and Cream Truffles, in the holiday section at target.

The Super Bowl was almost a week ago now, but I'm still craving snacks. Savory snacks with a dipping sauce. These Asian Chicken Meatballs with Peanut Dipping Sauce, to be exact. I made these for the Super Bowl, we devoured them and now we need more! Seriously, these Chicken Meatballs and peanut dipping sauce are good enough that my husband, my picky two year old and myself leveled this dish before halftime.

    Easy Valentine Pop Tarts

Valentine's Day is right around the corner and falls on a Friday this year. How fun. We've decided we'll celebrate Saturday with our boys by doing an all out breakfast feast, including these easy valentine pop tarts. We tested out the recipe last weekend and they're delightful. Flaky pastry surrounds warm gooey strawberry jam all topped with a quick icing. My waffle-loving son has traded up his breakfast request for these homemade pop tarts. So, we'll oblige and make them again for Valentine's Day.

  • Panera Inspired Steak Salad

    Panera Inspired Steak Salad

The first time I went into a Panera Bread, I was newly pregnant with my oldest son. I had just finished at the doctor's office and I was hungry, headache hungry, in fact. I ran to the drug store for some sort of pregnancy-friendly pain killer. On my way, there it was Panera Bread. The parking lot was full, always a good sign. So I ventured across the road and stood in awe of the menu. What did my hungry self want? I settled on the broccoli cheddar soup in a bread bowl, of course. It was delicious.

    Easy Asian Chicken Coleslaw

This week, the leader of the weightloss challenge put out a request to all the members to come up with great salad ideas and share the photos and recipes, if we chose to. Challenge accepted! I immediately started thinking of different ingredients and how to put it all together. What would make me want to eat a salad?

The mellow zip adds such a lovely flavour to anything they're added to. Use them to add a light crunch to sandwiches and salads. Nevertheless, whatever you choose to add them to, you won't be disappointed.

  • Spanakopita Inspired Grilled Cheese

    Spanakopita Inspired Grilled Cheese

Creamy, gooey cheeses mixed with fresh spinach and dill are sandwiched between two golden fried slices of brioche bread in this spanakopita inspired grilled cheese. I have been thinking about this grilled cheese for months. A fan of spanakopita (greek pie) for years, I remember sitting in my auntie Cath's kitchen, assembly-line style, making those delicious phyllo packets. She sent me her greek pie recipe last year and I've been putting it off. Written in cryptic code, I'm a little intimidated to try it. It's an add-a-bit-of-this-and-some-of-that type recipe and frankly, I'm nervous. This recipe is a classic, hence my trepidation. They're…
