Easy Asian Chicken Coleslaw

I’m two weeks into my latest weightloss challenge. I say latest, because, I have no idea how many challenges, diets, quick-fix gimmicks I’ve tried over the years. I’m that girl. The one who has tried it all. I’ve had a few successes and many more disappointments but I’m learning and that’s all good by me.
I’ve tried low carb, no carb, high fat, no fat, vegetarian, counting calories, counting points, you name it, I’ve probably tried some variation of it. The only one I avoided was the prepackaged meals. I could never fit that into my budget. I even tried a 3-day cleanse that ended with me blacking out for mere seconds, but enough that I spiked my head on the wall and fell, luckily, onto my bed. That was the end of that and I have never tried it again.
With years of dieting under my belt, I’m finally learning that it’s really a matter of finding what works for you. What changes can you make and stick to? I love trying new things. I’m not the girl to shy away from a challenge. With a plan in place, I’m all in.
This week, the leader of the weightloss challenge put out a request to all the members to come up with great salad ideas and share the photos and recipes, if we chose to. Challenge accepted! I immediately started thinking of different ingredients and how to put it all together. What would make me want to eat a salad?
To be honest, I’m not a huge fan of salads, I find them tedious. I hate the prep work and leftovers are a total waste. I’ve heard people say they order salads when they’re out at a restaurant. This, I don’t understand. I will never waste a meal out, on lettuce. It would have to be an amazing salad for me to choose that over any other option. Now, if the meal happens to come with salad, I will partake. Otherwise, you’ll be hard pressed to find me ordering anything green off the menu.
So, with the salad challenge looming, I knew I had to come up with a salad that I would enjoy. A salad so good, I would eat it over and over. Well folks, here it is, Easy Asian Chicken Coleslaw. Do you remember the Killer Coleslaw from the Best of Bridge cookbook series? I’m a big fan, and this salad reminds me a little of that. I started with a coleslaw mix, cause well, that saves me time and frankly effort. Then, I added the good stuff, chicken, apples, cranberries, nuts, onions and topped it all with an Asian-style vinaigrette. Folks, it was delicious! Seriously, it might just convert me to a salad eater.
So there you have it, salad challenge accepted and in my opinion, perfected.

Easy Asian Chicken Coleslaw
A chicken coleslaw packed with Asian flavours and a bunch of great add-ins.
INGREDIENTS
- 14 oz. bag coleslaw
- 1 chicken breast, diced
- 1/4 cup cranberries, dried
- 1 apple, diced
- 1/4 cup pumpkin seeds
- 1/4 cup slivered almonds, toasted
- 2 green onion tops, diced
- 1 small red onion, sliced
Asian Dressing
- 1/4 cup olive oil
- 1/4 cup rice vinegar
- 1 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 1 tbsp honey
- 1/4 tsp ground ginger
INSTRUCTIONS

Mix the salad ingredients together.

In a mason jar, shake dressing ingredients for about a minute or until well combined.

Pour over salad and toss to combine. Enjoy!
