Since moving to the South, I’ve been loving the barbecue out here! It’s so so good. We pick up a tasty smoked meal from Jim n Nick’s at least once a month, but my favourite is the Mini Cheese Biscuits you get with your order. They’re insane! So good! There are never any left, they disappear like hotcakes. It’s a must! I decided with the world shut down and our family cooped up in our cozy home, it was time to recreate these biscuits.

Now, let’s be honest, I wasn’t ever going to truly find the exact recipe. Jim n Nicks is a huge chain here in the South. They pump out this secret recipe by the hundreds daily. These addictive bites are perfection right down to the last crumb, so I’m pretty sure this isn’t a recipe you’ll just stumble upon. While I may not have mastered their version, let me tell you, my copycat is pretty darn close. They’re ridiculously good, just as addictive and oh so cheesy.

I’m a little embarrassed to admit how many hours I’ve spent scouring the internet looking for the actual recipe. It’s pretty elusive and rightfully so. However, after reading through pages and pages of comments, most of them saying this or that recipe wasn’t quite right. I did come across the list of ingredients, no measurements, but supposedly it’s from a long time staffer, so that’s what I used as inspiration for these mini biscuits.

How to make Mini Cheese Biscuits

The biscuits are super easy to whip up! They’re delicious, addictive and the perfect bite alongside soups and stews, barbecue (obviously), as a side with your morning eggs. I’m also totally fine with devouring them with absolutely nothing else!

Ready to dig in? Start by sifting together all the dry ingredients. Cut in the butter. I used a pastry cutter, but a couple of forks will also do the trick! Break the butter down until you end up with a coarse crumb texture. Next mix in the cheddar cheese and set that bowl aside. In a separate bowl, slightly beat the eggs and mix with the buttermilk until combined.

Make a well in the dry ingredients and pour the buttermilk mixture into the centre and then mix the two until just combined. Spoon the batter into a mini muffin pan. Fill the muffin tin almost to the lip and bake until golden and cooked through. Pop them out of the muffin tin and let these cool on a cooling rack.

When I asked my husband his opinion, he firmly thinks they taste just like the real deal. While, I disagree, it didn’t stop us from eating all 44 mini muffins. So, you know, they might not be exactly Jim n’ Nicks, but they’re still downright delicious!

Mini Cheese Biscuits

Almost the same as Jim n Nick's famous biscuits. These tasty bites are addictive and compliment just about any meal. Mini Cheese Biscuits are our new favourite side!

Prep Time 15 minutes
Cook Time 18 minutes
Servings 44 biscuits

INGREDIENTS

  • 2 cups flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, softened (European)
  • 2 cups sharp cheddar cheese
  • 1 cup buttermilk
  • 2 eggs

INSTRUCTIONS

  1. Preheat the oven to 400 degrees F.

  2. Sift together the flour, sugar, baking powder, soda and salt. Cut in the butter until it resembles a coarse meal. Then stir in the cheddar.

  3. In a separate bowl, whisk together the buttermilk and eggs until well combined.

  4. Pour this into a small well in the dry ingredients and stir until everythign is just combined.

  5. Spray a mini muffin tin with cooking spray and fill each tin just shy of full.

  6. Bake for 8-10 minutes or until golden and baked through. Let cool completley. Store in an airtight container for a day.
