Pulled Pork Grilled Cheese
I feel like pulled pork gets packaged as a summer food, and I get it. Obviously, summer means outdoor cooking, all things smoked, grilled, and barbecued. BUT, when you can make pulled pork in a crockpot like this recipe here, I think it’s appropriate for all seasons, especially when you can use it to make the tastiest Pulled Pork Grilled Cheese sandwiches.
I think it’s safe to say, sandwiches are a fantastic meal. The perfect vessel for all sorts of ingredients. I mean, let’s think about this for a minute, they’re portable, usually have a sauce or spread, filled with top-notch ingredients, served hot or cold and downright delicious! I haven’t met a sandwich I don’t like to be honest. Sandwiches can be fancy, humble, messy, comforting, footlong, bite-size, in a pocket, open-faced. What isn’t there to like about a sandwich.
So, I guess you’ve figured out that I’m a huge fan! Grilled cheese stole my heart years ago. It was one of the first things I learned to cook for myself and I would, no lie, get up early in the mornings before grade school and make myself a grilled cheese sandwich. It would be cold and soggy by the time the bell rang for lunch, but it didn’t matter, I still loved it.
Since then, I’ve only upped my sandwich game. In our house, we have grilled cheese every couple of weeks. This pulled pork version is one of our favourites. It’s so simple, and the flavours are on point! It’s messy, but oh so worth it. Tasty pulled pork with a hit of heat, gooey melted cheese, pickles to brighten it all up and then, of course, barbecue sauce to dip, cause what would a pulled pork grilled cheese be without it? How to Make Pulled Pork Grilled Cheese
I use my Slow Cooker Brined Pulled Pork recipe, but if you have a favourite pulled pork you can use it instead. You’ll want to just make sure it’s nice and shredded, so you don’t get a big chunk at once. It’s still going to be messy, but this helps! Add a generous amount of the pulled pork to a slice of sourdough.
Before that though, here’s my pro tip. You must have cheese on the top and bottom of a grilled cheese sandwich if you’re adding in any extra ingredients. Skipping this step could mean your sandwich won’t hold together and really it’s cheese, the more the merrier!
So, to start butter the outside sides of a couple of slices of sourdough bread, layer on two slices of Colby cheese. I used pre-sliced cheese here, but you can always cut enough to fit the bread. Next, add a good helping of the pulled pork and top with patted dry dill pickles. Finish with a couple more slices of Colby cheese and the top slice of buttered bread. Grill until golden and the cheese is melted.
This sandwich is gold! It reminds me of hanging with my best friends. It’s relaxed and comforting. I don’t have to be polite or dressed up. I can literally dig in and feel totally fine about the inevitable mess that’s about to happen. This Pulled Pork Grilled Cheese is good food for good times.

Pulled Pork Grilled Cheese
A messy grilled cheese sandwich, but so worth the cleanup. Tasty pulled pork with a hit of heat, gooey melted cheese, and pickles to brighten it all up are sandwiched between slices of sourdough bread. And then, of course barbecue sauce to dip, cause what would a pulled pork grilled cheese be without it. It's just like your best friend, no need to be polite or pretty. It doesn't mind if you get comfortable and dig in!
INGREDIENTS
- 4 slices sourdough bread
- butter
- 2 cups pulled pork, or more (see note)
- 4 slices pre-sliced Colby cheese (or enough to cover the top and bottom of the sandwich)
- 1/2 dill pickle slices
- barbecue sauce for dipping (your favourite)
INSTRUCTIONS

Butter the outside sides of each slice of sourdough.

Layer two slices of Colby cheese or enough to cover the bottom slice of sourdough. Top with a cup of pulled pork, pickles (patted dry with a paper towel) and finish with two or more slices of Colby. Top all layers with another slice of sourdough.

Place the buttered side of each sandwich into a preheated pan. Over medium heat cook until the cheese is melted. Keep an eye on the sandwich, they can burn if left unattended. Flip to fry the second side and cook until cheese is all melted.

Serve with your favourite barbecue sauce for dipping.
