I go through spurts and starts with the Food Network. There will be weeks where I binge-watch as much food-related tv as I can stand and then nothing for months. I went through one of those bouts a few months back. It was a competition show where on one episode two of the contestants both made a version of eggs in a hole and I knew I needed to share my favourite recipe for Loaded Egg in a Hole.

Hot Vinegar Pan-Fried Beets (Two ingredients)
Hot Vinegar Pan-Fried Beets may seem a little misleading. These beets are not spicy at all. I just mean hot as in temperature and vinegar as vinegar not pickled. I see a lot of recipes for pickled beets, but this is not that. This is one of my favourite side dish recipes EVER. I've always loved these beets. This is how we grew up eating this pretty red vegetable. And let me tell you this was one side I NEVER skipped and for a young kid, that's saying a lot.

Spinach and Feta Scrambled Eggs with Tomatoes
There's a little coffee shop in the city across the river from my hometown. The shop was owned by a family friend and was definitely the hot spot in town when it opened. We'd hang out there after school drinking their version of a frappucino. And on Saturdays, we'd head over the border to get Spinach and Feta Scrambled Eggs with Tomatoes. It was the best way to start the weekend.

Ginger and Vegetable Fried Rice
The first time I served Ginger and Vegetable Fried Rice, it was to a group of my coworkers. We had planned a potluck dinner after work, but we added a twist. I was part of the social committee, we'd plan all kinds of fun stuff, and this time we decided to have each coworker pick a country out of a hat, and cook a recipe from that region. I feel like pulled pork gets packaged as a summer food, and I get it. Obviously, summer means outdoor cooking, all things smoked, grilled, and barbecued. Caesar Salad with Mushrooms and Crispy Breadcrumbs
When I'm at a restaurant, I generally choose the caesar when offered a side. Of the three usual options, caesar is my go-to. It's not as filling as the soup and the side salad is, well, boring. Now, a good caesar salad in my opinion has to have fresh crunchy greens, a garlicky dressing, bacon and loads of parmesan, Caesar Salad with Mushrooms and Crispy Breadcrumbs takes my favourite salad, one step further. The addition of fresh mushrooms is incredible. I also like to top the whole thing with crispy salt and pepper breadcrumbs for extra crunch in every bite.
