• No boring salads here! Jim n Nick's Copycat Pulled Pork Salad is just like the original. Seeing as I only ever order this salad (and extra cheese biscuit) I knew I had to recreate this at home. It's loaded with pulled pork, bacon and cheese. But it doesn't stop there add in fresh tomatoes, cucumber, toasted almonds and homemade croutons and you've got a salad that doubles as a full meal!

Jim n Nick’s Copycat Pulled Pork Salad

Ok, I know I said no more salads, well at least in my mind I did! I had all intentions of taking a break from the green stuff. I've been making salads left and right and it feels like every new salad creation is just a little better than the last one. And I'm pretty sure this Jim n Nick's Copycat Pulled Pork Salad might just be the best one yet.

  • Looking for a big bowl of salad that DOESN'T SUCK? I've got you covered! Crunchy Ramen Noodle Salad is the dish I could eat over and over and I bet you can too! Loaded with almonds, sesame AND sunflower seeds on a bed of cabbage along with ramen noodles and the Asian flavours in the dressing makes this salad pretty irresistible. It's also ridiculously easy and you can have this on the table in a matter of minutes!

    Crunchy Ramen Noodle Salad

Ok, I've been throwing salads at you left and right, well to be fair, maybe it's more like two other salad, BUT it feels like my life has been inundated with salads lately. I blame January. I have to say, though, this one is probably my favourite. AND it's less of a salad and more of a crunchy, cold, noodle dish. You guys Crunchy Ramen Noodle Salad is the one salad I could probably eat weekly.

  • STOP roasting beets! And don't bother pickling them. I have your new favourite recipe right here! And all it takes is two ingredients!! Hot Vinegar Pan-Fried Beets are the only recipe you will ever need. Boiled and then pan-fried and finished with a drizzle of vinegar creates the tastiest side for all of your meat & potato style meals. Not to mention you can add them to salads, bowls, etc. OR eat them straight up just like me!

Hot Vinegar Pan-Fried Beets (Two ingredients)

Hot Vinegar Pan-Fried Beets may seem a little misleading. These beets are not spicy at all. I just mean hot as in temperature and vinegar as vinegar not pickled. I see a lot of recipes for pickled beets, but this is not that. This is one of my favourite side dish recipes EVER. I've always loved these beets. This is how we grew up eating this pretty red vegetable. And let me tell you this was one side I NEVER skipped and for a young kid, that's saying a lot.

  • Cheesy Hash Brown Casserole is such a classic. We all have a version of these potatoes that we love, but this is my favourite. It's extra creamy and cheesy and one of the best sides to ever exist, EVER! I've gone ahead and added a block of cream cheese, cause, well, why not!? Top it with cornflake crumbs and bake until it's golden and bubbly and you've got an easy side dish for dinner. One the whole family will love!

    Cheesy Hash Brown Casserole

Cheesy Hash Brown Casserole is a classic recipe. You've probably had this at a potluck, a family gathering or another event. You may even have a copy of a recipe similar to this one tucked away in your recipe box or notebook of favourites. This version, however, is extra creamy and cheesy. I took it upon myself to add a block of cream cheese to the original recipe and oh holy geez, yes, please! This stuff is good!

  • My three year old dissed my amazing spaghetti sauce for this Feta, Tomato & Toasted Nut Salad. Seriously, if a kid chooses salad over carbs, you know it has to be a good one. I've added bacon, cause well, bacon! And serve it with a drizzle of your favourite salad dressing and you've got an easy dish that will show up repeatedly on your dinner table.

Feta & Tomato Salad with Toasted Nuts

I like to think of this as a winter salad because of the festive colours, or maybe because we've nicknamed it Snowball Salad, but really you could serve it any time of year. This tasty Feta & Tomato Salad with Toasted Nuts is a recipe that my auntie Ele made, literally just once, and I fell in love with it. I'm not a salad lover. To be honest, I don't make it often, but with all those impending resolutions creeping up, that may have to change. Snowball Salad will be making an appearance on our meal rotation.

  • This Carrot & Cream Cheese Jellied Salad breaks the mould with its tropical flavours, a dreamy cream cheese base and carrots to cut through the sweetness! Loved by my family, so much so, three families all submitted this exact same easy recipe to our family cookbook. Jello salad has never tasted so good, or perhaps been so loved! Add this to your list of must-tries, you won't be disappointed.

Carrot & Cream Cheese Jellied Salad

Have you heard me talk about my family cookbook? It's sort of our own little food bible. It was created years ago for a family reunion. It's packed with great family-loved recipes, a lot of which have and will continue to appear here! Just like this Carrot & Cream Cheese Jellied Salad which is a favourite. So much so, my dad and my two aunts all submitted the exact same recipe. If that doesn't elude to this recipe's greatness, I'm not sure what could.

  • Picking a name out of a hat has never been so much fun! Years ago, our social committee at work planned a potluck dinner but it came with a twist. The names in the hat were countries and your dish had to be influenced by that region. I had a Ghanian fried rice recipe from my past. So, I whipped up this easy Ginger and Vegetable Fried RIce side dish. Loaded with flavour this rice was a huge hit!

    Ginger and Vegetable Fried Rice

The first time I served Ginger and Vegetable Fried Rice, it was to a group of my coworkers. We had planned a potluck dinner after work, but we added a twist. I was part of the social committee, we'd plan all kinds of fun stuff, and this time we decided to have each coworker pick a country out of a hat, and cook a recipe from that region. You guys it was so much fun!

Loaded with traditional stuffing flavours of onions, celery and fresh herbs, it'll remind you of the usual side. but then it gets updated with wild rice, apples and sausage which takes this dish to a whole new level.

Rustic Wild Rice & Sourdough Dressing

The potato wedges are seasoned and baked to perfection, crispy on the outside and fluffy on the inside. Your new go to side dish for everything.

    Hometown Favourite Wedges and Dip

There's a restaurant, in my hometown, that makes the best potato wedges and dip. Hands down, you will not find a better house dip, and the crispy fried potatoes are to die for! Every time I go home, in the summer, I have to stop here. Years ago, I got my hands on the list of ingredients for both of these, and with a little experimenting, I can now have Hometown Favourite Wedges and Dip in the comforts of my own home.

  • Southern Baked Macaroni and Cheese is cheesy, filling, and perfectly flavoured. This indulgent mac is our favourite. Baked the southern way, with loads of love and extra cheese, this macaroni casserole is quickly becoming my go to side dish!

    Southern Baked Macaroni and Cheese

Living in the south, I have become completely enamored with the mac and cheese down here. It's so good! Seriously, since, I moved out here, four years ago, my husband and I have tried so many restaurant versions, I've lost count. But, even with all those samples under our belts, or should I say expanding them, homemade Southern Baked Macaroni and Cheese still takes the cake.
