French Onion Rice
I can honestly say, I've never truly been a fan of rice. It's just never been my thing. I truly believe it's from overuse, you see, my mom loved rice, or maybe it was my Dad and she was cooking it for him. But, after years of rice at least once a week, I'm over it. That was until, I added a package of onion soup mix to my rice. And like that French Onion Rice was born and I'm a huge fan.

I am a huge fan of greek food. I want it all, souvlaki, pita bread, lemon potatoes, dolmades, and feta cheese. Oh and spanakopita, I could live on that flaky cheese pie, alone. Don't even get me started on the desserts. Let's just say, it's one of the most flavour-packed types of cuisine out there. Years ago, I bought a greek dressing mix from Epicure and I used it on everything. Then I ran out, had to come up with my own Homemade Greek Seasoning and I'd put my seasoning up against Epicure's any day!

Lemon Garlic Pasta with Parmesan
This pasta is perfection! With just a few simple ingredients regular ol' spaghetti transforms into heaven on a plate. Seriously, it's to die for! Yes, I know that sounds a little over the top, but give this a try and tell me I'm wrong. I bet you won't. It's an easy side dish, lunch dish, main dish. Heck, I'd eat this Lemon Garlic Pasta with Parmesan for breakfast, if there was ever any leftovers, it's a real problem. If you like leftover pasta, and really who doesn't, go ahead and double the recipe now.

In my 20s, when I bought my first house, I would get home from work and watch hours of cooking shows. My girlfriends would be watching Sex and the City and I'd be watching Anthony Sedlak from the Main on the Canadian Food Network. It's here that I came across this recipe for Smashed Butternut Squash with Sage. I had been watching an episode of the Main and the chef was making some sort of chicken and a few other things, but what stood out was the butternut squash.
