My girlfriend, Gabe, called me a few weeks back, and wanted a bit of advice on a dip she wanted to serve. She was going to serve bruschetta, but her bread always gets soggy, (it happens) so she wanted to flip the script, and change it into a dip. We brainstormed back and forth until we settled on a cream cheese base with tomato bruschetta on top. It didn't quite translate as well as we imagined. But with a bit more chit chat Creamy Feta Party Dip with Bruschetta Topping was born.
