Tater Tot and Bacon Breakfast Quesadillas
Has anyone else been feeling a little lost with the state of the world right now? We’ve been very fortunate and really have zero reasons to complain, but I find myself in a total funk and I just can’t shake it. I haven’t had any desire to cook or blog and I’ve put on way too many pandemic pounds! BUT this past weekend was great and it started with Tater Tot and Bacon Breakfast Quesadillas. Nothing special happened but it just felt like we turned a corner!
I’ve made quite a few easy breakfast recipes over the years but I think this one takes the cake. It’s all the good bits from breakfast folded into one delicious bite. Seriously, it’s crazy good! It was so easy and the flavours are jumping off the plate. It reminds me a little bit of Camper’s Hearty Breakfast Scramble (such a winner) but made even easier with tater tots!
You already know I’m not one to shy away from ingredients. And this one was no exception, it’s loaded with savoury bacon, lots of gooey cheese, some green onions and of course smashed tater tots to really take this over the top! I knew the flavours would be good, but this was one of those bites that made me literally go “mmmm”, and then I proceeded to demolish that quesadilla!
The nice thing about this is that it’s totally filling, I made two quesadillas and it fueled my husband, myself and our two boys well into the afternoon! That’s my favourite kind of breakfast. If you’re looking for another handheld breakfast that will fill you up, you’ll love this Sweet and Savoury Breakfast Sandwich. Not only did we make fast work of this breakfast, but everyone loved it. My oldest, after one bite, said, “Wow, Mom, thanks for making this for me.” as if I’d really put in a lot of effort, ha, I just smiled and said thank you!
How to make Tater Tot and Bacon Breakfast Quesadillas
Let’s chat about how easy these are. There are different layers to this and it does take a little bit of time, but truly they’re very simple. Start by baking the tater tots according to the package directions. Once those are in the oven, panfry the bacon until crispy, drain it on paper towels, but reserve the bacon grease. Next, chop up the green onions and grate your cheese.
Once the tater tots are cooked pull them out salt them gently and flatten each with the back of a fork. Now it’s time to put it all together. Gently beat a couple of eggs with a pinch of each salt and pepper. In a medium frying pan, about 9″ in diameter, heat a tablespoonful of the reserved bacon grease. Trust me on this, that bacon grease is an excellent way to impart even more flavour into this dish, in my opinion, it’s a must!
Finally, pour the eggs into the heated frying pan. Sprinkle a quarter of the green onion on top of the eggs and cook until they’re set. Top with a sprinkle of cheese and then cover with a tortilla. Using a large flipper, turn everything over so that the tortilla is now on the bottom.
On one half add a sprinkle of cheese. Add another quarter of the green onions, a couple of slices of bacon, feel free to crumble this. Then top with a layer of tater tots and obviously a bit more cheese, fold the other side over creating a quesadilla. Flip it over and let it cook until the cheese has melted on both sides, serve with sour cream.
Together this handheld breakfast is cheesy, gooey, crunchy and savoury all in the same bite. This morning starter is good, like for real good! And it makes me excited to get back into the kitchen so I can share more recipes.

Tater Tot and Bacon Breakfast Quesadillas
Tater Tot and Bacon Breakfast Quesadillas are the epitome of breakfast love. Loaded with bacon, tater tots and lots of cheese. A must-make!
INGREDIENTS
- 2 9-10" flour tortillas
- 4 eggs, large
- 1 1/2 cups Colby jack cheese, shredded
- 1 cup tater tots
- 4 slices bacon
- 2 stalks green onions, sliced
- 2 tbsp reserved bacon grease, divided
- salt & pepper to taste
INSTRUCTIONS

Bake tater tots according to package directions, when finished cooking, press each tot flat with the back of a fork, set aside.

While the tater tots are baking, fry bacon until crispy, drain and reserve grease.

Beat two eggs in a small bowl, set aside.

In a 9 or 10" skillet or similar, heat one tablespoon of the reserved bacon grease over medium heat. Gently pour in the beaten eggs and season with salt and pepper. Sprinkle a 1/4 of the green onions over the eggs and let cook until set.

Sprinkle 1/4 cup of the cheese over the set eggs and cover with a tortilla. Carefully flip everything over so that the tortilla is now on the bottom. On one side of the quesadilla add another 1/4 cup of cheese, then spread on a tablespoon of the green onions, two pieces of bacon, a layer of tater tots and finish with another 1/4 cup of cheese. Fold the empty half of the tortilla over the layered side and cook on both sides for a few minutes until the cheese is melted through.

Repeat with second tortilla and serve with sour cream.
