So, I’m going to be completely honest with you. These aren’t my favourite pancakes, I wish I could love them, but they’re just not my thing. I know, why on earth would I be sharing a Two Ingredient Keto Pancake recipe if I didn’t love it. Well, it’s because everyone else in my house thinks these are delicious. Both of my boys devour these like they’re going out of style. My husband loves that they’re low carb. My parents make them all the time and my niece and nephews also adore them.

Let me explain a little bit. I’m trying to eat properly, but I still have a few non-negotiables, carb-filled pancakes being one of them. Now, don’t let me scare you away from these two-ingredient pancakes at all. They’re light and fluffy with an almost souffle-like texture. How did I achieve that you ask? This recipe is my moms and her version just blends the cream cheese and eggs together. I changed that up a bit. I blended the egg yolks with the cream cheese and then whipped the egg whites until they formed soft peaks. Folded the two together and ended up with a super light and fluffy version!

How to make Two Ingredient Keto Pancakes

You will also need a bit of butter to fry the pancakes in. This isn’t necessary but makes for easier cooking. You can also add vanilla or cinnamon for a bit more flavour.

Instructions

  1. In a high-powered blender, blend together the egg yolks and cream cheese. In a separate bowl, using a hand mixer beat the egg whites until soft peaks form.
  2. Fold the egg yolk and cream cheese mixture into the egg whites, taking care not to flatten the egg whites.
  3. Spoon a quarter cup of the pancake mixture into a pan over medium-low heat until bubbles form and the edges look dry. Carefully flip and heat until cooked through, about 2 minutes per side.

They’re super easy and like I said everyone loves them. If you’re looking for a traditional pancake, try this one, but if you’re on a low-carb or keto diet or trying to lose some weight, these pancakes might just be the perfect fit for you!
