Best Ever Leftover Potatoes

Stuck with dull leftover mashed potatoes, with no idea how to elevate them? Take those lifeless leftover and turn them into the best mashed potatoes you'll ever eat. Your family will wish these leftovers came first, trust me.

INGREDIENTS

  • 3 cups leftover mashed potatoes
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup sharp cheddar cheese
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 1/2 tsp sea salt
  • pinch pepper, fresh ground
  • 3 tbsp butter

INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Prepare a large baking dish by greasing the bottom and sides.

  2. Using a hand mixer, combine letfover mashed potatoes, cream cheese, sour cream, cheese and spices until well mixed.

  3. Spread potato mixture into the baking dish and top with pats of butter. Cover and bake for 30 minutes.
