My best friend calls this recipe Potatoes extraordinaire and with good reason, they’re so rich and creamy. Truly the star of any table. I came across a similar recipe in the Best of Bridge cook book series. And I think that’s what I love the most about cooking, everyone adds their tweak to a dish which makes it their personal favourite. Whether it’s extra onions or no onions, that extra sprinkle of cheese, a few olives. Every little additions or subtraction makes it uniquely yours.

How to make Best Ever Leftover Potatoes

I always use leftover potatoes for this. At most family gatherings, especially Christmas and thanksgiving when turkey is the main meat, I’m a firm believer that you must have gravy. The next day, however, I’m looking for these luscious potatoes. They take no time to whip them up.

I start by bringing my cream cheese to room temperature. If you’ve forgot to take it out of the fridge, prior to starting your recipe, here’s my little trick. Take the block of cream cheese out of the cardboard but leave it wrapped in the foil packaging that it comes with and then toss that into a bowl of very hot water. By the time you’ve gathered the rest of the ingredients it will have softened up a bit.

So, to make these Best Ever Leftover Potatoes, just mix all the ingredients together using a hand mixer. That’s it! Scoop the mix into a greased baking dish and then dot the top with pats of butter. Bake and serve it immediately.

Best Ever Leftover Potatoes

INGREDIENTS

  • 3 cups leftover mashed potatoes
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup sharp cheddar cheese
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 1/2 tsp sea salt
  • pinch pepper, fresh ground
  • 3 tbsp butter

INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Prepare a large baking dish by greasing the bottom and sides.

  2. Using a hand mixer, combine letfover mashed potatoes, cream cheese, sour cream, cheese and spices until well mixed.

  3. Spread potato mixture into the baking dish and top with pats of butter. Cover and bake for 30 minutes.
